twinwillow, My deepest apoligies for running YOUR thread off topic. You must be new here, as you will notice many of these threads have a way of turning into a side topic but yet related to the original content. Example I stated that I missed watching Justin and to do so I would have to do something which I'm not very good at, swallow my pride and make up with the cable company. The response from the other posters was very informative to me anyway. I found out that his program is avalible on DVD and options about mounting a parabolic Dish to enable me to enjoy Justin . I have learned something with the assistance of the other posters, now tell me Grasshopper what have we learned here today. Chow Jim

      I checked History.com today and found that The Butcher isn't scheduled again for the next 14 days. The website shows programming for the next 14 days. I was hoping to catch this one.

        This is somewhat off-topic, but while we're discussing television cooks, in case folks aren't aware of this, WGBH has released two DVDs of Julia Child's "The French Chef" series so far, from the 1960s and '70s. I'm checking Amazon periodically for word on a third.

          Thanks for the update Fred. We watch for those Dvd's also.

          We watched one of the Justin Wilson shows yesterday. It was kind of odd... He introduced himself at the beginning of the program..in a historical sense. Yesterday's broadcast was taken from a 1996 collection of the earlier broadcasts... So here he was (elderly- at the time of the 1996 re-broadcast, since deceased) introducing a program he had done 20 some years earlier.

          I was quite taken back by the simplicity of the cooking set and the condition of the 'kitchen'. Mixing, by hand, the meat-stuffing for Cabbage Rolls after a 5 second rinse of his hands under (probably) cold water is not part of today's practice on TV!!! Hard to explain...but you can sure see how the modern cooking shows took what Justin, and Julia and other pioneers used and 'evolved' them into what now serves Paula, Emeril, and Rachel etc.
          It was a great look back into a part of our food heritage that had faded a bit in my memory.

            Justin was da man, I learned how to cook from watching his shows every saturday and sunday morning.

            Yes, he would have been the biggest food network star. His sense of humor was legendary, his skills in the kitchen top notch.

            My favorite series he did, was in the mid 80's he did an outdoor cooking series, that got me to really love smoking, grilling, and cooking in cast iron outdoors.

            I take pride in my nickname, If it were not for Jusin Wilson, I GAR ON TEE, I would not be the cook I am today.

              well, i'm certainly not as interested as i once was when emeril was featured on the pbs "great chefs" series. i guess when you cook on tv for 10+ years you do change your ways.

              having said that, it was an episode of the "great chefs" that i obtained two receipes from emeril that i will never forget and that are, to this day, classics. one, blue cheese stuffed ribeye and two, shrimp and andouille cheesecake. yum, yum, yum...

              as for justin, he was first known as a comedian/speaker/lecturer and then evolved into the "cook" he was later known as. he's the king. long live the king.
