For those of you who have RFD-TV on your Sat. Dish, Direct, or Cable system... They are running "Re-Runs" of Louisiana's famous Justin Wilson's old TV shows a couple of times a day. Check the schedule for times. I loved this show for years and am really happy to see it being "aired" again. ALSO- Tonight (Wed. June 28th) on the History Channel's "MODERN MARVELS" topic is "Butchers". It dealt with the evolution and todays practice of Meat Cutting. Tons of good info on topics we have seen on this site recently--- Brains as food...Injection treatment of Meat... Packaging and other areas. If you get a chance, watch it.It will be rerun a couple of times this week.

thank you! i love justin wilson's i'm glad for you to see me i guarantee" i learned how to cook thanks to him and to this day i think the funniest joke was when he said they were holding a raffle at a dollar a piece for a dead mule. someone asked justin "won't people be mad?" and he answered "only one"

The late Justin Wilson was a great character the likes of which we will never see again. His Cajun cooking shows evolved on PBS stations over a period of 30 years. He was the genuine article. His storied, salty jokes and cooking episodes are very much missed by this fan.

how can anyone forget Justin...Worstershirshire Sauce....and those suspenders..also "I'm so happy for you to see me".....he's one of the reasons I've so fallen for southern home cookin....I don't have a dish...only cable..so alas...I won't be able to see him...ok...here's another old southern cook...anyone remember Natalie Dupree?

I can't get him, but I remember his recipe for potato salad was the same as my Mom's. And it was Good. I am envious of the people who can see his re-runs. I remember Natalie, too. In fact, I have one of her cook books.

Jim, don't bother trying to make up with Comcast. It appears RFD bills itself as the cable network for rural American and seems to be carried only by a few small cable operators. Claims to be on DirecTV and Dish (which makes sense since for many in rural America satellite is the only option). Comcast just wants to raise your monthly bill $5 a year so they can pay for sports franchises on commercial cable nets.

I don't know which cable companies carry RFD-TV (based, I believe, in Nashville, TN) but both the Sat Networks...DISH and DIRECT do have it. (I am on DIRECT at this time, but had DISH up to recently) On the schedule screen for RFD-TV They have segments set for this coming SUNDAY 7/2 at 12:30 PM (Noon 30) and next Wed. 7/5 at 3:00 PM. I have seen a few DVD's of compilations of his programs ("The Best of" types of disc's) in some Best Buy-type of stores.

His cabbage rolls(along with everything else pretty much)were to die for. I loaned my two cookbooks of his out never to get them back. I wanted to make those cabbage rolls sooooo bad. His daughter emailed me the recipe.

Wish I could tell you what I really thought of Comcast. I thought about going to Direct TV but I live in a saltbox style home built in 1784, no attic so the dish would look like crap on the roof. I have FIOS from Verizon and I am just waiting for them to roll out their cable service over the existing lines. I miss the cable, and I thought it over, I'm not going to cave. I'm a well rounded Irishman, I carry a chip on both sholders. Chow Jim

Justin Wilson always held my attention, but when he cooked Turnip Greens w/o water and used Sauterne Wine instead...as well as drinks a glass or two... I knew I had to learn how to cook Cajun...Justin's way...and I make a lot dishes his way.

Justin Wilson was the first TV cook that held my attention. I truly enjoyed his humor, style, accent and cooking. I had never watched another TV cooking show before that. I assume there were more. Justin was the one that made me want to visit the Louisiana parishes to explore the various types of Louisiana cuisine. Thanks to him, I believe I have explored almost every part of Louisiana from Venice to Grand Island and all other parts. It ain't easy to get there. I knew Justin Wilson from his comedy records my Dad played when I was a kid. Some 30 years later, flipping channels, I heard his voice and stopped. Crawdads were the entree that day. At the end of the show, he sat down to enjoy his crawdads with a class of burgundy and the admonition that we ignore the red wine/white wine nonsense. "I drinks what I likes!", says he... Wonder if I can find those records on eBay????

I have five of Justin's cookbooks, and his "cajun humor" book. He was my first TV "teacher" when I was learning to cook. I loved the guy. When he died, NPR's Morning Edition played a great excerpt from an interview of Justin by Bob Edwards. Justin makes the point that Cajun food isn't spicy, it's "highly seasoned." (quotations from memory) Bob (sheepishly): But, I mean, what if I don't like food that's highly seasoned, what if I kind of like it bland? Justin: Where you grow up, boy? Bob: Louisville, Kentucky. Justin: Well now, there's no excuse for that, since you come from where they make all that fine Bourbon whiskey. Bob: Well, I developed a taste for that. The "scholarship police" didn't like Justin; said he made fun of the Cajuns. But the Saturday after his death, Weekend Edition interviewed none other than Paul Prudhomme, who was very appreciative of Justin. He said that if Justin hadn't kept the interest in the Cajuns alive, he, Prudhomme, would have never been able to cook Cajun food in his restaurant. He said that Justin kept talking about Cajuns when they were looked down on, and when their culture was very much in danger of being smothered. Justin is dear to me for another reason. My wife used to work until 4 in the morning, and on Saturdays, my son, when he was little, would sit with me and watch cooking shows on PBS in the mornings, including his favorite, Justin Wilson. The music would start, and he'd make his own "wooEEEEE" kind of sound.

Jimeats - I have DishTV (live rural and wasn't going to pay cable $3 a foot to lay cable 900 ft from road to house). Not wanting to have a dish compromise the roof (more holes), I mounted my dish myself on a galvanized fence pole (standard size). Took me all of one hour's work. I used a post hole digger (manual type), put in 40lbs of quick drying concrete, then the pole, then back-filled the gap with regular dirt. Once the pole was situated in place (used a plumb line to make sure it was vertically true), and concrete dried. Then had a DishTV sub-contractor come out and do the house wiring, align the dish, and set-up the receivers (6 yrs ago). I have been pretty happy every since. Other then the cost of the pole and the concrete (as well as the personal labor), didn't cost me a thing extra. As long as you have the line of sight to the satellite(s), a roof mount is not required. Roossy - Graham may have been a qualified Chef.... but he never once inspired me to cook *any* of the mostly cruddy things he had on his menu... don't get me wrong, he was definitely entertaining in the way he could make anyone smile, but his food was definitely not something I would generally eat Justin, on the other hand... he was both the Grandpa many of us would have loved, *and* he mostly cooked things we'd all eat  And yes... after a 16 hour workday, I considered this a worthy topic to sign-in and submit my puny input

Casper, Thanks for the input. I switched from DISH to DIRECT, but used the same mounting device for the new antenna. Frankly it was 6 of one and half-dozen of the other...but DISH had a deal going for NEW customers. When I asked for the same deal (as a multi-year user) They said it was for new customers only... So DIRECT had the same offer, and a lower monthly rate, I switched. There are a number of food-related programs on RFD-TV...and some railroad shows that I like to see now and then. Justin Wilson was a Wonder!! He treated his guests, especially children as if they were the most important person he would ever meet. I think Paula Deen has patterned her approach to TV Cooking after Wilson's Folksey approach. (He was a Master of the technique!)

I used to have a Justin Wilson shrine at my house. My sweety tore it down one day while I was gone. I am still mad about that! He was a big influince on my cooking, and I miss him! Joe

Mr. Mayor - I agree whole haeartedly.. it's a toss up between Dish and Direct... neither care for their existing customers.. the two comments I would have between the two is that Direct has a few more options more suited to the sports fans. Other then that, they both want MONEY. Neither take care of existing customers needs... just want MORE customers. BTW, I agree about Paula's direction. It is a smart one. If Justin was a pioneer, Paula is definately following the foot steps. But good steps they are. I was sling'in hamburgers for myself when I was 8 yrs old... but Justin *inspired* me, and was a good sub for a lot of family I would have liked to have had. Good people are good people.... Have a good night... off to devour my hot wings (wife still at work 17 hrs later)... sigh of "wish things were more family oriented"..... Casper

Zman and I loved Justin Wilson! In fact, we were talking of him the other day, "remember back when there was no FoodTv and no BAM!" He always had a pitcher of beer and one of wine. (Smart man) I saw one episode where he was cooking a whole pig and he constantly referred to it as the P-I-G HOG. Hilarious. He should've done a show or two with Julia......

As this thread also includes "others", I would have to say, in my opinion, Mario Batali is the (TV) chef i hold in the highest regard. The food he cooks on his shows leaves my mouth watering. That little Italian cutie, Giada is pretty good too!
