Thanksgiving 2010 - What's on your menu?

Ok, I know it is not even Halloween, but I have been planning my Turkey Day menu and the invitations have gone out. Since I'm going to my sisters on the Eastern Shore, nothing smoked on Thanksgiving, a roasted bird, a fried bird, and I think I'll steal the rest of CajunKings menu.

I'm working, so it'll be (as always) whatever I happen to put together. Or there's always dinner with the homeless (takes place in the same building and they let us come as long as we make a donation).

Turkey Sausauge stuffing Mashed potatoes w/gravy Spinach bake(recipe courtesy of CajunKing!) Lima bean casserole Strawberry jello w/strawberries, walnuts and celery cran/orange relish homemade cloverleaf rolls sweet potato pie pumpkin pie mincemeat pie( gotta have it!) My cousin will be here from N.C., so she is making the sweet potato pie.Bob cant stand traditionally made sweet potatoe, so that will cover that category.I always look forward to cooking Thanksgiving dinner!

Whether dinner's at my parents' or my in-laws' the meal will be essentially the same: Appetizer tray featuring black olives, cherry peppers, and dill pickles. Roast turkey with sage & onion stuffing and additional dressing on the side. Mashed potatoes and gravy. Green bean casserole. Packaged dinner rolls. Probably some cranberry sauce. Pumpkin pie. The first 5 items are the only ones I eat and are more than enough for me! Brad

I haven't thought that far ahead. My family and I don't like turkey very much so it will probably be standing rib roast (beef,) mashed garlic potatoes, glazed carrots (from the garden,) some kind of dessert, and a bottle of sparkling cider. We try to invite people from work who don't have any other family around and usually we end up with a houseful. David O.

"Too rich" is in the same category as "left over wine." I've heard it exists but have never personally experienced it.

Stuffed Celery! Blue cheese, pimento cheese, peanut butter. There are 100s of combo stuffing recipes on the net so who know what other stuffing we might come up with? Maybe a Sunday House smoked turkey? I love those. Joe

I have a Turkey Day reservation at the Roadfood-reviewed Strongbow Inn, located in Valparaiso Indiana. Last Thanksgiving was my first time there, and I enjoyed a delicious turkey dinner with all the traditional trimmings.

CajunKing, what a great menu! Just curious, but how large a crowd are you expecting? I'll be going to my brother's who will have turkey, dressing, rice and gravy, green peas, cauliflower with cheese sauce, sweet potatoes, and his mother-in-law will either make an asparagus casserole, or a hot pineapple and cheese dish. Last year my niece made roasted root vegetables in place of the sweet potatoes, which I hope she'll do again. I ususally bring two choices of desserts, one will be a banana pudding and a private stash of peanut butter cookies for my brother. I'm leaning towards a lemon doberge cake I would order from the bakery.

We pretty much do the same menu every year. Butter and garlic basted turkey Sometimes a glazed ham Homemade mashed potatoes and gravy Herb dressing/stuffing Squash of some sort Spinach (with cider vinegar for me!) Baby onions in cheddar cheese sauce (my favorite) Green bean casserole Fresh rolls Green salad with the works Apple and cherry pies

BelleReve It really depends on the year, I sent out 28 Invitations, I have 4 RSVP so far. Last year we had 13 for sit down dinner and another 11 stop by for leftovers and dessert. I can sit 18 (2 8ft folding tables) comfortably in the great room any more and they have to eat in the kitchen or front porch (or collapsed on the couches) Al The door is always open it is only a 95 minutes drive up river.

I tend to stick to our tradtional Thanksgiving dinner and have changed only a few things over the years. Instead of roasting the whole turkey we now smoke two turkey breasts and also do a spiral sliced ham. Then there's the mashed potatoes, dressing, gravy, green beans with onions and mushrooms, and corn pudding. Last year we also did some roasted root vegetables that all really liked. Even though we're down here in the South we're not fans of sweet potatoes or pumpkin so dessert is Italian Cream Cake. After all of that the leftover turkey goes to make gumbo and the ham for sandwiches - the hambone goes for a pot of pinto beans. It's all good.

I'm having a total knee replacement on the 18th. My 70th Birthday is on the 23rd.   I'll either be in the hospital or a rehab center on my Birthday & Thanksgiving.  I'll probably get Sterilized turkey, Aseptic mashed potatoes, Disinfected stuffing and Anesthetized green beans!   I'll have my bride sneak in a piece of Pumpkin Pie!

Foodbme Good luck on the knee replacement, I hope she can sneak you in that pumpkin pie Stricken CajunKing's Spinach Bake 1 lb frozen spinach 1 lb small curd cottage cheese 1/4 cup butter 3 large eggs 1 cup sliced mushrooms 3 TBSP ap flour 4-6 oz sharp cheddar grated 1/4 minced onions salt & pepper to taste durkee's french fried onion chips mix all (except durkees) ingredients in a bowl combine well pour into pammed 9x12 baking dish bake covered in a 350 degree oven for 50 uncover sprinkle durkees over top bake 10-15 minutes more remove from oven & let sit 5 minutes serve
