The 13th Rib

God gave ever Hog 13 Ribs which are named Baby Backs [ size, location]. Many BBQ's only serve 12 ribs when you get a full rack. The 13th is an end rib, obviously, and it is bigger than the other ribs and prone to get a little dry during the smoking process, it's also a little tougher, some say, me, I serve all 13 ribs on a full rack order and on 1/2 rack orders you might get either 6 or 7 ribs. Would you all prefer the 6 rib portion or the 7, with the kinda tough 13th rib?

    Nothing wrong with having a little change in texture. As long as it tastes good it's worth eating!

    I probably would not serve it, but I've eaten Tom's ribs and they were all tender so what the hell do I know?

    I probably would not serve it, but I've eaten Tom's ribs and they were all tender so what the hell do I know?

    Why waste a piece of meat?
     
    Hell I cook full spares with the cartilage and everything still attached!  Do you think a 13th rib is gonna bother me?  LoL

    I still got my own teeth, so one that is a bit chewy.....especially when cooked by Chewy.......should still be delicious

    Not that I doubted what you said but I was curious and wanted to learn more Pig Anatomy!
     "A pig side has 15 to 16 ribs (depending on the breed), but usually two or three are left on the shoulder when it is separated from the loin. So, a rack of back ribs contains a minimum of eight ribs (some may be trimmed if damaged), but can include up to 13 ribs, depending on how it has been prepared by the butcher. A typical commercial rack has 10–13 bones. If fewer than 10 bones are present, butchers call them "cheater racks"."

    My ribs are packed by Swift or Farmland, They keep a consistent 13 count rack!
