The Egg

I guess I go through life like most people do, I live in a great country and have everything I need. Every kind of food could be bought in the mkt, I think nothing of how it got there. For The last few yrs we have been raising our own Cows. We brought in 25 hens, raised them through the winter, sold off some to pay for the flock and winter feed. We now have 8 hens and one Rooster. I figured the hens would start laying in the spring, they need longer days of light to really produce. The first day of Day light saving time, one of the gals produced the first egg. I watched her as she struggled with laying her first egg. While i watched her, I thought of the way we mass produce our food to feed the masses. I thought of how the chicken is producing the perfect food. The egg she is giving me, doesn't have to be refrigerated, she takes care of that by putting a protective coating on the shell that protects the egg from bacteria. When I take the eggs home I keep them on my counter for weeks without refrigeration. I will wash the egg just before cracking it to eat. If you have ever had a fresh egg, you will never go back to store bought. The fresh egg cooks better, and tastes much better. In this world of ours that everything is full of sodium and chemicals, do yourself a favor, buy local eggs or if you can raise your own.

This egg was one of several that the chicken has moving down her Oviduct, each egg is at different stages of growth. The yoke is small and the white is being formed as it travels. It takes 25 hrs from the time the egg leaves the Ovary and enters the canal. The Chicken will not lay an egg in the dark, so as the days get longer, the chickens will produce a better amount of eggs. I don't think I will ever buy store eggs again, I have seen the process, I know how hard the Hen works for that egg, I will never look at it quite the same anymore. When I make my egg over easy, I understand it wasn't really easy at all. Raising our own food has changed the way I look at food. I have a new found respect for the natural process of keeping the animal in good health, clean pasture, insuring they have a good life. I like knowing what goes in my families meals, the less hormones and antibiotics the better I feel. I think of Roadfood as being a site that we seek out the best of what restaurants have to offer, why not start that process at home, with the ones we love.......................pnwc

    I still remember the best egg I ever ate.
     
    My mom was at the hospital having my brother and I was staying at my grandparent's house.
     
    My grandmother went out to the coop and brought back the most perfect, delicious egg I've ever had.
     
    That one in your picture looks a lot like it.

    Mar, I took that picture just in case someone didn't know what a egg looked like. I didn't know your egg looked like mine, small world ha........next thing your going to tell me is , your grandma's chickens had feathers...................

    Mar, I didn't just fall off the turnup truck...............Mar, I grew up in the inner city, not many Roosters crowing in the morning, if you get my drift. We use to go for Sunday rides out to the country, everyone would look for the first site of a cow. Our eyes would get big, they were like wild animals to us.............

    I used to have around 20 hens free ranging around my property, the best eggs ever. Never had any bugs or spiders in the house either, the birds were on constant patrol around the yard and would walk around the foundation looking for juicy bugs.

    It really helps having chickens around when you have a pasture and Pigs...It keeps everything in balance.............

    The egg. 

    I have always wanted the green egg but I was at Costco and they had a similar model for $600.00.  Anybody know if they are similar.  They sure did look similar to me and very heavy.

    I have the large size Big Green Egg and I looked at the copy at Costco.  You can't go wrong!  What it comes with is amazing for the price.
     
    The copies have really improved over the years.  You just can't say you have a BGE.
     
    The BGE dealers are all complaining about it if it says anything.

    I think consensus is that the other kamado cookers all work really well, that there are few differences. I've looked at them, too, and the quality looks pretty good.

    Here is Costco's version of the BGE.  It looks very good to me and I have no idea how it compares to the BGE.

    Paul, it's quite good.  It's also comparable to the Extra Large Egg.  I looked at it and think it's probably as good and probably better just because of the way it's accessorized. 
     
    The Big Green Egg is good because of word of mouth.  There's a BGE Cult.
     
    I sold them and own one.
     
    I think the BGE is about owning a BGE.  I really don't find it better than the others.  Think... marketing!
     
    The price of the Costco model is outstanding.  For all anyone knows, the people in Mexico that make the bodies of the Big Green Egg could also be making it for the Costco model.
     
    If I didn't have mine and wanted one I'd certainly consider it.  (I also like the Primo for the cooking zones.  You can cook on only half of it, reserving your fuel... BUT it's priced like The Egg)

    Greg, A BGE is a clay grill, smoker and oven.
    You can control the temperatures from down in the 200s to slow cook and up in to the 700s to bake a pizza.
     
    You can also use them with cast iron pots to cook stews and braise foods while giving them a touch of a smokey flavor.
     
    They are very efficient and use little fuel if used correctly.
     
    You can cook a burger on a $49 grill and you can also cook one on a clay cooker. 
     
    It's what else you want to do with it that makes it special.
