The Ultimate Fattie (aka, Redneck Sushi)
Sun, 12/14/08 5:39 PM

I saw this guy's cheese-filled bacon lattice and thought "Amateur Hour." Although the bacon lattice is rather inspiring, a bacon-cheese roll-up left me feeling unfulfilled. Cheese and bacon is a good start, but more heft was needed to make this a satisfying entree or even appetizer. So I added pork sausage, muenster cheese, diced poblano, and some sliced pepperoni to boot. Wrapped in the bacon lattice, my pork fattie was smoked with hickory wood. The result. Eat your hearts out Roadfooders.

MD - My wife and I sliced it and ate it as an appetizer. My son suggested serving slices on small hamburger buns to make pork sliders. Jim

Slice it thin and use it for a BLT. I bet you could also slice it and put it on top of a burger...Russ

Since some were asking, serving suggestion: This turned out to be pretty good on a (canned) biscuit. The bac-saus-chez combo on a scratch-made biscuit would be money.

I had re-posted your pics and descriptions on the OMC site and someone who also had seen the original bacon fattie pic and recipe suggested that you top yours with a fried egg to make it perfect!

Thanks DD. That is something to aspire to. I spent so much effort on the bacon lattice, that my fattie was lacking. I've got ideas for next time. Stand by .........

New developments in Redneck Sushi - Bacon Cheeseburger Roll. This is a view of the ground turkey end (ground round was used on the other end). Sliced and served on a small hamburger rolls, these sliders were very popular.
