I get a lot of compliments on my chicken corn chowder.  If interested:
Chicken Corn Chowder

Ingredients

❏ 4-5 strips of bacon crumbled
❏ ½ to 3/4 cup of celery diced
❏ ½ to 3/4 cup of onion diced
❏ 1/3 to ½ cup of carrot diced
❏ 3 tablespoons flour
❏ 1 quart of chicken stock
❏ 3/4 to 1 pound chicken diced
❏ 1 can (14.75 oz) creamed corn
❏ 1 good sized potato (3/4 to 1 pound) diced
❏ 8 to 12 ounces of corn kernels (frozen or fresh)
❏ ½ teaspoon poultry seasoning
❏ 1 cup heavy cream at room temperature
❏ 1/3 teaspoon African bird pepper (crushed Habenero pepper if you can’t find the bird pepper.) If you want less heat, you might to use a milder pepper.

Directions

❏ In a large stock pot: saute the bacon until crisp. Pour off the grease and crumble the bacon. (An easier, but more expensive alternative is to buy already cooked and crumbled bacon pieces.)
❏ Stir in the celery, onions, and carrot.
❏ Stir in the flour.
❏ Use a whisk to stir in the chicken stock.
❏ Add the chicken, corn and potato and stir.
❏ Add the poultry seasoning and stir.
❏ Stir in the cream.
❏ Stir in the pepper.
❏ Simmer on low-to-medium heat, stirring occasionally, until potato is tender. (This could take a while.)

Have a good day.

Smoked chicken and corn chowder at Sam's Cafe in Phoenix is one of the best soups that I have ever had!!! Not too smokey and the sweetness of fresh corn makes this one of my top 10.

I always loved the French Onion Soup at the Peak Restaurant in Hong Kong. Best I've ever had. There also used to be a steak house called Lindy's in Kowloon that made a finestkind New England Clam Chowder. But, I have to say that the Hatteras Clam Chowder at Sam and Omie's in Nags Head is the best in the OBX. Maybe on the East Coast.

Oops, I screwed up and didn't attach this to the poster above.
Go to the "soup" forum", select "cabbage soup", 3rd down and the recipe is there.  I liked the soup so much I called Shoney's to get the recipe.  The woman could not tell me because they got it in premade.  I called corporate and talked to someone there and they couldn't really tell me because of the large increments it's made but gave me the basics and I figured it out.  It's really good.

About a month ago I was in The Pour House in Stoughton WI and had a bowl of beer cheese soup that was outstanding.  At that time it wasn't a regular menu item but I was told that it might become one during the fall and winter months, so one of these days I'm going to stop in again.

The only suggestion I have would be to add a can of Vegetable Broth instead of a cup of water.

I might say my mothers green bean soup, but the trusty chicken soup can't be beat.
I made my own version of the green bean and potato soup, with some creams, and some bacon.
I think my mother used buttermilk.

The family chicken soup is an all day making and eating project, but worth it.

Hey, you got to add green beans to that potato soup !!
A little bacon. Mothers green been soup, great. I always get the urge, but I only made it once myself. Our chicken soup is also great.

RE: The world's BEST soup ? 2010/01/26 11:12:56 (permalink)
Early in this thread I mentioned a great soup, but I just realized that I never did post the recipe. I would never try to suggest that it's the world's best soup because I'm sure it's not. But it is really, really good. I adapted it from a Rachael Ray recipe.

Sausage, Bean and Broccoli Rabe Soup

Ingredients

2 tablespoons extra-virgin olive oil
1 pound Italian bulk sausage - half hot, half sweet
1 medium onion, chopped
1 carrot, chopped
1 large potato, peeled and chopped into small dice
2 cloves garlic, chopped
2 cans of cannelini beans, drained
Salt and pepper
4 cups chopped broccoli rabe
2 quarts chicken stock
Ditalini or other small pasta shape
Grated Parmigiano-Reggiano to pass at table

Directions

Heat medium soup pot over medium-high heat. Add the olive oil and sausage and brown. Add vegetables and beans. Season with salt and pepper. Cook mixture 5 minutes to begin to soften the vegetables. Meanwhile, cook ditalini until al dente and drain. Add rabe to the vegetables and wilt. Add stock and cover pot. Raise heat and bring soup to a boil. Reduce heat to simmer and cook 10 minutes, then add cooked ditalini and continue cooking for another 5 minutes. Adjust seasonings and serve soup with the grated cheese, for topping.
