I believe I've mentioned my Habaneros before and promised pics, I'm sure you've all been waiting. So....Theedge does Habaneros!!! These are just the first few that turned, I usually get a nice crop towards fall. I grow them, seed them, smoke them and then dry them. Great on just about anything.

      Heh heh heh, lots of choking going on in the office today. I used some of the peppers to spice up some home aid beef jerky. The dehydrator came with a little press to make jerky out of hamburger. I said to myself “no way I’m trying that, can’t possibly be any good”. For some reason I decided to give it a whirl and was shocked to be happy with the results. People we’re surprised when I told them it was made from burger, you'd never guess from the texture.

        The one and ONLY time I tred these were on a burrito from a GREAT mexican place here. They make a "mash" out of them, and spread that on the tortilla before any of the other ingredients. I thought I was gonna die! I forced myself to eat it. I would have sworn someone was twisting a knife in my stomach for hours afterwards. I've had to lower myself to the lesser heat of a serrano.

          ya got my mouth (and eyes) waterin!! Im interested in the groundmeat jerky... any chance ya can post the recipe/technique?

            I purchased an American Harvest dehydrator, it was like $29.00 at Shopko. It came with a jerky kit like the attached, only smaller. I had two pounds of 85% lean hamburger. All I did is mix in two packets of seasoning and two packets of the cure along with some of my Habanero flakes. You just fill up the little device and pump out strips of jerky on to the trays. When they we’re dispensed I shook a little black pepper on them too. I turned the machine on at 6:00 P.M. and took them off at around 4:00 a.m. as I happened to be letting the dog out and they seemed perfect. You can blot them a few times during the process with a paper towel to remove any excess grease. Like I said, the people I gave them to didn’t even know it was hamburger.

              an interesting concept for sure.. Ive made jerky for years as well as drying various veggies and fruits. Im guessing this is more on the line of pepperoni or a slim jim??

                I can't answer for Theedge but I've been using my American Harvester jerky gun and dehydrator for years. It looks just like regular jerky that's about an inch wide and an 1/8" thick. No one believes it came from ground meat as it tastes just like a tender strip of regular jerky. I use ground round and you never have to blot. A few years back, I made a batch of some wicked Scotch Bonnet hot sauce and I dehydrated some and pulsed the dry sheets in a mini-blender jar and packed some in a nitroglycerine pill carrying tube. Made of metal with an O-ring to keep moisture out, I carried it with me on my key ring and whenever I had bland food, I simply added water and voilá instant hot sauce. The jerky gun looks and acts just like a cookie gun and has 3 tips but I only make the strips. Fantastic product. I went in with a friend and we bought a case of mushrooms from the wholesaler and we dehydrated them; some sliced, some quartered, some whole. When rehydrated these plain white button mushrooms took on a very meaty flavor, plus a little chew. After tasting, if someone said they were $15/lb. imports, you would have thought it just about right!

                  I'd say it tastes more like good jerkey then either of those things. I've got a local butcher that makes real jerky, obviously that's the best, but it's something like $18.00 a pound? I served some more up last night to some fellows out on the deck (putting the band back together) um (screw you I quit) um (like you're gay and stuff)...(you suck!)....why am I doing this? Anyways, they couldn't believe it was burger either.
