Does anyone not have a fridge in their trailer?  What are the non-obvious advantages disadvantages?

    Would not be allowed here unless only working under temporary permits.  Most health departments are going to require mechanical refrigeration unless the products you are serving are all pre-packed and non-perishable.

      Lets put it this way.............If you need it and don't have it, the health dept closes you down..............If you don't need it and don't have it, you stay open...............how to stay in Business 101...........

        you don't need it here for events and festivals. not sure about street vending. but, with the coolers and ice, it has to be to temp and can't be drowning in water. we use coolers for over flow for large festivals.

          I've also seen iced coolers being used for overflow (bags of chicken wings in particular. Makes me think why you/I don't see or hear of any truck with wings. Def have to check with your local regulators for a final answer.

            most of the meat we put in the coolers is frozen, like taco meat. helps with temp
