ToNights Special- Mango-Peach Catfish

Tonight we are trying out a bottle of Mango Peach Salsa purchased at Costco out in Oregon on our tour. we bought two large bottles to bring home and shared one with the BushMaster when he was here. We had tasted it and decided it would do well as a marinade for the Catfish filets. So after an 8 hour bath in the stuff, into the pan(lightly Olive oiled) it went. Looks pretty good to me



Then onto a bed of the Oriental rice and some colorful veggies and you have a catfish presentation fit for a Mayor, and his bashful bride.
No treats for the pup from this dinner!!

Wow Al, that looks lovely and tasty! Pup will have to save his appetite for the left-over crabcakes from the MD Convention!

Looks better than great!!! BUT, being "Southern" born & raised, I do question the skimpy serving size..., i.e. only TWO filets per person?

Mayor,what a fantastic looking plate! i have not tried the bottled version,but I love mango salsa. Next time you run into fresh mangoes,try this:

Chop up 3 mangoes,add 1/2 cup (or more) chopped sweet onions,1/2 cup (or more) chopped cilantro,the juice of 1 or 2 limes and your favorite hot sauce (I like a good habenero) to taste. This makes an awesome salsa that is great with blue corn chips or any fish or chicken or pork or.......

Are those fresh or frozen veggies....im not trying to be the veggie gustapo but with those wonderful hunks of meat it better be fresh...i cant stand frozen veggies.

You know when i first read this forum name i had a hard time wrapping "Mango-Peach" around "Catfish" in my brain---it was just a bit more "chef" then "cook", if you know what i mean---No offence Lisa!!!---but the pics did it!! Looks like a winner Mr Mayor---sits nice in the pan and a great presention---that alone improves the flavor 30%, and YOU liked it, so i know it tasted good too!

Don't knock FROZEN veggies till youve lived through a Rockie Mtn winter and gone 2 or 3 months on CANNED!!!!AAARRRGGG!!! anytime time i have buy tomatoes in the store i remember that the ONLY thing i really regret about leaving Californias central valley was not have a year round farmers market with fresh veggies and esp GREENS!!!! But anything is better then 3 mos of "3 can cassarole"!!! Now i got me a vacumn machine---so next fall i will show some "frozen veggies" well worth eating!

I comes in a large jar (Costco Style!) in the refrigerated case. After trying this I have the urge to try adding some fresh fruit to a 'normal' chunky saulsa to see how it blends the flavors.
Any white fish would be good for this, We just happened to have Catfish at $2 a lb in the local market here in Hoosierland.

I'm going to try it with flounder. I already ate some of the salsa with chips for lunch.
