 Tomato Pie

This is a good time to make one as the Summer crop will soon disappear
1 cup seasoned bread crumbs
3 or so peeled tomatoes1 good sized thin sliced onion, Spanish
2 cups grated cheddar cheese
2 large eggs lightly beaten
4 slices of bacon cut in half
pre heat oven to 325
butter a 9" pie pan
sprinkle 1/2 cup crumbs on the bottom of pan
arrange 1/2 the tomators on the crumbs, top with onion slices, top that with 1/2 the cheese, repeat the process with remaining tomatoes, onions and cheese, pour the eggs over the cheese, salt and pepper to taste, sprinkle on remaining bread crumbs
top with the bacon, covering entire pie, use more if needed.
bake in the middle of the oven, about 45 min. until bacon is crisp
let it sit 10 minutes or so
enjoy!
