Top 10 BBQ Smokers and Grills

BBQ is not just food, it’s a religion. The fastest way to start a fight is not to talk politics, but to argue about the virtues of wood vs. charcoal vs. gas. Even the word itself is kind of controversial: is it barbecue, barbeque, bar-b-q, or BBQ? Just don’t bring it up with a purist (or the one cooking your burger!) Heres the list:

    I dont care how you spell it---as long as it TASTES good----but i deo feel that if your doing it with WOODSMOKE---its grilling!---not CUE!

    Grilling canotes cooking with high heat and a short cooking time, where as B.B.Q. ing is a low heat, wood fired cooking process that can take all day or night. The preferred method for me is to get some hardwood charcoal (lump, not briquettes) and get the smoker/ grill to about 195 degrees covered. Apply meat and cook for a long time as to get the connective tissues in the meat to break down. DO NOT OVER COOK as this will yield dry, tough meat. How do you know when it's done? When it is falling off the bone or the internal temp reaches about 180 degrees. Keep checking though as you don't want to overcook. I have cooked some briskets for up to 9 hours and they were the best meat I ever had. Have to keep mopping every half hour though. BBQ is very labor intensive but it is IMHO the best way to prepare any meat.

    only saw 2 smokers there that would pass florida state inspection. southern pride and the jr. the others would have a tuff deal due to the lack of nsf sticker. no ul plate they don't care about as that is between your insurance agent and you. but i will say this my fec100 costs me the smae on insurance as stick burner like a klose or a lang would enclosed in a trailer and it ain't cheap. thank goodness for llyods of london they insure anything.
    to be honest most of the things shown on the link are not professional equipment. neat though!!!

    In Houston you will have to have NSF and UL, They can be very picky
