Totally bummed out!

I becam quite ill after my last heart attack back in 02. Since then my appetite has really changed. I was the pure carnivore! Dinner would be a nice steak without the bother of a starch or veg. Even cheap steaks made me happy. I was in love with the chuck 7 none blade steak. I would gnaw the bone and then lap up the juices on the plate. I dont know if its just me or the quality of meats has just changed drasticaly! Its like eating cardboard. Just plain bland and like eating cardboard. The worst part is getting high enough heat to brown the outside and crisp the fat before its extra well Tonite we got a couple of choice Angus Porter houses from Meijers. The choice meats they sell are close to the butcher shops for quality(unless you can find Prime cuts). They were nice steaks, a good pound and 1/4 each. I was very careful to cook it to no more than medium rare. Once again it was an even brown thru the middle and dry! I did freeze them the day we bought them, but they were only 1 week old. I remember when I would try for rare and under cook(that was when I had one of those old bottom drawer gas broilers where you couldnt watch, just guess. Now I can pull a steak off rare and still have a brown center unless its nearly raw.It really bums me out as I cant remember the last time I enjoyed a good steak. On the up side we got some huge asparagus for 1.29lb. It was bigger around than my thumb and I was afraid it would be woody. It was very fresh with all the leaves tight. It was some of the best ever. No fiber at all. Delicious!

Time to start using an instant read thermometer. Hope that your're watching what you eat. < I say when I need to lose probably 60+ pounds >

"I dont know if its just me or the quality of meats has just changed drasticaly!" Maybe your tastebuds are trying to do you a favor before you get to your next heart attack. Try a veggie. Other than that, how thick are the steaks you are buying?

I dont eat beef more than once a month and that includes hamburger. We cant stop living merely limit the portions

A few years back, I shot a moose and this is what we ate for six months (no beef). When the moose was gone, I bought a nice ribeye and frankly it was terrible. From not eating beef for six months and eating only lean moose, my taste buds rebelled to the fat. I can't speak to why you can't cook to mr, but the apparent lack of fat in your diet suggests you just may not respond well to the fat in the beef. Try buying some buffalo or venison. It should satisfy your meat cravings without the fat. Great source of protien. Cook it simply, no fancy sauces, and never cook more than medium rare. Directly from the grill to the plate to the fork.

I'm always amazed at how non-gamey buffalo is, what great flavor it has for being so low fat. Great alternative to even lean burger.

A lot of beef does indeed seem to be less flavorful lately, and finding bone in beef at the grocery store is tough unless you want a porterhouse. I haven't found a bone-in-chuck in years. The bone adds to the flavor, especially in wet cooking methods but IMO even in grilling. Lately it has been so bad with some of the grocery store beef I have given up the rare/medium rare centers and just gone to cubing it and marinating or rubbing it and grilling it in cubes, or making Spiedies. Eating less beef is probably good for both of us though.

MikeS, nope, but in her state. Rained 13 straight days and nights. River almost crested and we were darn lucky to get out. We got on the last float plane out before all turned to snow. Some hunters up river had to stay in the woods three more days, no food!!!

Well the streak was broken. Yesterday we split a flat iron steak and grilled it. The outside got a nice char and the inside was a lovely MR. A little chewy but by cutting it on the bias like a London Broil with my steak knife it extremely doable. Its a sign of the times when a $4//lb piece of meat beats a nice porterhouse hands down!
