It's Friday night, Mollie still has a smile on her face and our trip ends at 9:30 Am in the morning. We went to the wine tasting at 7 PM, tasted some wine and then off to our last dinner on the train. The time flew by, we boarded on Tuesday night at 8:30 and now it's Friday night. Here is what we had for dinner on our last evening riding the rails.
My wife had the Parmesan crusted Halibut with a Red Pepper coulis
I had the Roast Prime Rib with a Rosemary Demi-Glace

Breakfast Transcontinental Two eggs prepared any style, with hash browns, your choice of bacon, ham or breakfast sausage, served with toast or a fresh-baked muffin.

Stuffed French Toast French toast stuffed with cheesecake filling topped with wildberry compote and whipped cream

Lunch Turkey Sandwich Open-face turkey, bacon, Brie, apple and spinach sandwich served on focaccia bread.
Shrimp and Scallops Seared shrimp and scallop skewers served on salad with saskatoon berries.
Citrus Salad Orange and grapefruit segments, shaved fennel and diced tomatoes and avocado with goat cheddar cheese over baby spinach with tangy fresh herb vinaigrette.
Grilled Chicken Ravioli
Ravioli with grilled chicken breast and basil-blended Ricotta, Mozzarella and Asiago cheeses, roasted garlic and rosemary served in duck ragout.

Four-cheese Pasta Ravioli ai quattro formaggi with a creamy filling made with our best cheeses: Ricotta Impastata, Fontina, Parmigiano Reggiano and Sardinian Pecorino Sardo cheeses in a marinara sauce.

I would do this trip over again in a heart beat. If what I have posted gives anyone a push in this direction, you will have the time of your life. I never had any use for a watch, when your ridding a train you have no control over time, the train control when you get to your destination. I didn't use my phone for 4 days, no internet for 3 days, and I didn't miss it a bit.
We pulled into Toronto 2 1/2 hrs late, like I said you never set your watch by the train. We had people on the train with close connecting times, I think most of them missed their connection. I would recommend a day of two in Toronto, you never know what can happen over 5 nights and 2800 miles of track. If any one would like more info on this trip, I can answer any questions.
