Since your trip will be almost totally on the
I-15 there are a couple of places I would suggest in SoCal and I am sure you can find a bunch of suggestions for the Las Vegas/Henderson area by hitting the search button at the top of this page.
In SoCal, in what is called the
"Inland Empire"- The Riverside-San Bernardino Couty area (and close-by neighbors), there is a mini-chain of semi-fast food places called
Farmer Boys. They used to be pretty much limited to Burgers, but have expanded their menu to include several breakfast items (big Omelets and other entrees) and very large salads that my wife loves. Their are about thirty of these places around the area from Temecula to Victorville. You can eat in- (order at the counter and get table service), or use the drive-thru. I recommend the Farmer Burger, with massive Onion Rings and Zuchini spears, and any of the salads if that is your sort of meal.

The Mad Greek is the stop to visit. Sort of weird, but not too bad for a middle of nowhere stop.

In-N-Out Burger? Plenty of them around the I-15 exits also...try the one at the Main St Hesperia exit or in Lenwood (near Barstow.)
