Great posts, dutchgirl! For those of us unfamiliar with it, could you tell a bit about what the cooking is? Is it all done in dutch ovens?

Ed, no. All chuckwagon cooking isn't necessarily done in dutch ovens. I'll get back to you with more details. Right now, I've gotta saddle up and do night vigilante patrol looking for Levi wearing folks. Extreme Glow, you made my day!

Ed Cowboy cooking is done in many a ways Dutch Oven Spit cooking Usually Cast Iron Pots (could be galvanized) Cast iron Skillets Buried in a pit Dutch ovens are one of the best ways to "Bake" something like bread, cakes, cobblers. Which usually is required for the cowboy cookoff competition Usually: Meat Dish Potato Dish Bean Dish Bread/Biscuit Dessert Using only ingredients available back in the mid 1800's The competition usually supplies a basic box of staple items for the competition. Meat, potatos, beans, dried fruit basic staples. If you like outdoor cooking / cowboy cooking it is a must see event sometime in your life.

Thanks, DG That's one of the most underrated drives in New Mexico. I love that road. Most people don't realize that you can ski this far in southern New Mexico. I think other than Cloudcroft, that's the southernmost ski slope in the US.

Dutch girl, Congratulations on a great trip report. Your photo work really adds to the the demension of the material you were describing earlier. A couple of suggestions that will help keep things 'flowing' when you post. Use the edit button to go back and add comments and captions to the photos that are 'unlabeled' when you first post them. Just type your comments on the line above the photo image link. I will frequently forget a photo when I am doing several in one thread. It is real easy to insert a new photo or change the order and add captions using the edit button. You did a fine job here. Welcome to Roadfood.

This report was phenomenal. Loved the photos and the info about a great foodie event. Have not been to New Mexico in 26 years but these photos (and Roux Dogs kind words) make me want to come back real soon.
