It is getting to be that time of the year again. Time to order up the holiday bird-in-a-bird-in-a-bird. I've gotten them in the past from www.cajuncrawfish.com ... I've been happy. I'm wondering if there is anyone outstanding in the turducken trade. Is there a Pepe's of turducken ???

I've never had the dubious pleasure, but I did see turduckens for sale at Jungle Jim's last month. I think I'll smoke my turkey this year. Last year I Cajun-fried, and it was just fine.

There is a interesting article in this months National Geographic about about Maurice, LA which is listed as the Tur-ducken town. They discuss the deboned birds with corn bread and prk stuffings on the birds. Very interesting Paul E. Smith Knoxville, TN

Having received warnings about spoilage when dealing with "pre-stuffed" turkey's for most of my life it's no wonder when I see the Turducken with all it's handling and pre-done stuff, I get concerned about health issues. Then I think about the sanitation level of the typical poultry factory production line, and I get doubly concerned ! Good luck on your home-made version of the Bird(s)!

Paula Deen showed how to make one of these yourself last night on her Southern Thanksgiving special on the Food Network, which I believe will be rebroadcast a couple more times. Looked really easy if you have your butcher do most of the deboning work. I have never had this, but it looked delicious, and I am thinking of trying to do this myself next year. Have any of you done a turducken yourself? For those of you who have, how does it compare to just turkey? I would assume it is richer?
