We used to have one of those festivals here in the middle of California... and they are delicious! A little crunch on the outside, tender on the inside, and as the lady said, a light flavor of chicken livers or gizzards, all in all a very delicate taste and texture. If you're ever in the Paso Robles area of California, they are a regular feature on the menu at McClintock's restaurant.
