I buy frequently the frozen variety of pototes O'brien.  I add onions, jalapenos and salt and pepper.  While they are still in the plastic bag, I microwave them for about ten minutes.  It does not cook them but it decreases the frying time considerably.

I add some oil to the frying pan and cook the potatoes on medium for about 20-30 minutes turning them as needed.  Works for me and made our Christmas breakfast much smoother.

Grated makes potato mush and mincemeat out of knuckles.

So what you do is hold the potato in your mouth as you grate.

Great them raw, soak in a little distelled vinegar and water, overnight is ok. drain, chopped onions mixed in,  fry in a little Crisco or Peanut Oil.

        What does the vinegar do?

        Thanks
Keeps them crispy, you want to soak out some of the starch!
