Village Whiskey's Duck Fat Fries and Short Ribs, with Cheese Sauce

Pure Genius.  A cross between a cheesesteak and gravy fries.  Thick cut french fries, fried in duck fat, rich short ribs in a hefty gravy and cheddar cheese sauce are browned off in a cast iron skillet.  Some of the best eating I've had in a long time.  A mere $12.

Village Whiskey is one of those new cocktail-centric bars - with great bar food.  Chef is Jose Garces, who also runs Amada, Distrito, and Tinto.  He is on this season's Next Iron Chef.  There are burgers, barbecued pork, fried quail and a lobster roll on the menu.  The burgers look great.  But I can't see myself getting past their short rib and cheddar fries.

That is a lovely creative menu...full of excellent options.   Especially during cocktail hour.

Oh, Lord.  I love potatos fried in either goose fat or duck fat.  My Czech mother always had a tub of goose fat in the back of the fridge for potatos and kraut.  I carry on her tradition, every time I roast a duck, the drippings get filtered and tupperwared.  Just for an occasional skillet of potatos salted and peppered fried golden brown in duck fat.

My fridge loves me unconditionally for the person I am.
