WEIGH IN: GRILLED OR BOILED?

WHAT'S YOUR PREFERENCE? I MENTIONED I'M TRYING TO START A DOG BUSINESS, AND I'D LIKE TO PEOPLE TO WIGH IN ON THIS. PERSONALLY I LIKE MY DOGS BOILED AND MY SAUSAGES GRILLED. I HAVE HEARD OF DEEP FRYING (JEEEZ, MY CHOLESTERAL SPIKES JUST THINKING ABOUT IT), AND COMOBOS OF BOILING AND GRILLING. I LIKE THAT COMBINATION, BUT IT DOES TAKE TIME. ALSO, CARTS USUALLY COME WITH EITHER BURNERS AND PANS OR GRILLS/BARBECUES. OF COURSE, FOR A PRICE EVERYTHING IS POSSIBLE.

Before I became a vegetarian, I liked my hot dog grilled to burnt-black perfection and also liked my Italian sausages grilled. All the other sausages I like boiled! Good Luck with your dog business! It'll be a success because there isn't enough of those around!(at least not here in East Tn!)

Good kosher all-beef hots taste great boiled, but I prefer most other hot dogs grilled. Also couldn't imagine Italian sausage any way but grilled.

Definitely grilled. Charcoal grilling is best, but a nice seasoned griddle still is preferable to boiling. And make mine well done.

Grilled by all means. A boiled weiner always seems to loose some of its flavor.

Grill-smoked. I like them slow-grilled over indirect heat, with mesquite or hickory chips. Remove the kettle cover just to turn the dogs. Slightly grill the buns, too.

DharmaDog----make sure to check local and state ordinances on carts---some places dont not allow grills attached to them---not sure why--other then fire or burn safty---seems to me a more sanitary system the the old style"dirty water" set ups--i too am considering the dame thing so im checking into the regs here in Oklahoma---where i have decided that if want a great dog im gonna have to sell it!!!

When I refer to proper boiling, the dogs are dropped into water that's a minimum of 140 degrees until they float to the top. Once floating, they're immediately sold. This prevents a water logged dog or a dog that discolors from being over cooked. It also prevents the dog from splitting as a result of being in hot water too long. A properly boiled dog will consistently look and taste the same. If you plan on selling lots of dogs and keeping your lines short, boiling is the way to go. Every once in a while, if I'm in a big hurry, I'll cross-cut the ends, make several shallow slashes along the length and microwave a dog for 40 seconds on high. Not bad.

Oh, should answer the question posed... If your going to sell off a cart and plan on doing volume I'd say dirty water method... They cook quicker so you have a faster turn around. But as flavor goes, grilled or chared is by far tastier!

Originally posted by tiki DharmaDog----make sure to check local and state ordinances on carts---some places dont not allow grills attached to them---not sure why-- thanks tiki. i have checked all the regs. and licencing and a grill-or actually a bbq - is not a poblem here (kingston, ontario...across from alex bay. NY) What is a MAJOR problem is location! there are few city owned spots (in the high tourist traffic area) and one fellow has all the major and minor hardware stores sewn up. Kingston isn't a very big town, about 116,000 and i have just returned after a 20 year hiatus. I talk to people everyday and look in outlying tourist areas, but i'm not too inspired by the results. I may have to go the route of weekend gigs (fairs, auctions and sporting events, etc.) which is a lot more organization work...and quite possibly not a full time living. dharma dog dharma dog

Yes, the kilodollar egg platter. Maybe they should call it "Eggs Rockefeller."

I like grilled or steamed. Boiled would be my 3rd choice.

Grilled. I mean there is something to be said about a dirty water dog for sure and there is nothing wrong with that. But I have never boiled a hot dog in my own house. I always prefer them grilled over good hardwood charcoal. i also like to split and cook themn on a griddle. If you gonna boil, remember to steam the bun. nothing worse than a boiled dog overshadowed by a big hard bun.

For a kosher style, all beef dog I like to simmer (not boil) in water, then finish it off on the backyard grill. Or slow cook on the griddle. For a German style beef and pork dog, either slow cooked on a griddle (first choice) or deep fry.

Grilled without a doubt, but I've been known to boil mine in beer before. My kids thought that was a treat.

Grilled over indirect heat (like Grampy's), or on a griddle slow enough so as not to dry out and burn, but until they deepen in color and glisten with their juice. And very lightly toast the buns face down on the grill. Frank
