WSM Smoke Day V - Presented by Roadhouse Bar-B-Que Sauce Mon, 05/4/09 8:30 PM (permalink)


The big day is almost in sight and I am beginning to smell smoke.  My annual barbecue bash is set for May 23.  It runs from 2:00 until dusk.  Buddy is supplying the sauce again and is actually taking off from selling sauce to attend this year.
 
About WSM (Weber Smokey Mountain Cooker) Smoke Day.
Here's a little history...back in 2005, one of our members, Joel Kiess, suggested that everyone should barbecue with their WSM on the same day. Then, we'd all post descriptions and photos of what we cooked here on the bulletin board. We held Smoke Day I on May 28, 2005 and we're now in our fifth year.

Smoke Day is a great way to celebrate a lot of things...Memorial Day weekend, the beginning of summer, National BBQ Month (May), and the fun and enjoyment of WSM ownership!

New this year


My dear wife is baking pies for dessert.  Over 3 dozen of them!  She tested a new crust yesterday with a Granny Smith and blackberry filling.  Dang!  That was one of the best pies I have every eaten, both the crust and the filling.  She said that the apple-blackberry pie is not on the Smoke Day menu.  Someone needs to persuade her to change that decision.
 
Last year's entertainment will not be able to attend (XI Lives has a paying gig), but I expect a guest appearance of The King and we plan on Karaoke.
 

The Smoked Goods



Coming out of my smoking pit are the following:
 
Appetizers - Redneck Sushi, BBQ meatloaf, Atomic Camel Turds, and possibly more.
 
Entrees - Brisket, pulled pork, pulled beef, spareribs, back ribs, hotlinks, BBQ chicken, smoked turkey drumsticks, and a partridge over pear wood. 
 
Let me know if I missed anything.
 


Nothing in life is free

        My new 18 inch with the built in thermometer is out on my patio.

        I've modified it,  but haven't used it!

          Thanks for the plug Jim.  You know I do it for the love of the smoke, not the publicity, but I'll take it anyway.

          I'm thinking about bringing an elotes casserole as a side dish.  I brought this same dish to last autumn's LTHForum picnic and it was a huge hit.

          Either that, or maybe I'll stop at Kopp's and pick up a gallon of vanilla for a little ala mode for Bobbi's pies...

              Please Please Please Please Please Pretty Pretty Pretty Pretty PLEEEASE with a case of Rock & Rye on top? Please make the Granny Smith Blackberry pie? PLEEEE HEEE HEEEASE?

              Granted, I might not make it before it's all gone, but dammit, to even have the chance. *sigh* All her desserts are good though. Mmmmmm, those little chocolate tarts she put in the freezer & then took out & the texture had changed for the better. Mmmmmm, those custardy things with the fresh strawberries. mmmmm

              Ok, I am coming & will bring the only thing Paula Deen has never deep fried--Corn, Tomato & Avocado salad....y'all!

                Sounds absolutely fantastic. There's a special place inside of me for pies, so I'll gladly volunteer to try out any of the concoctions coming my way. I have no idea what I'll bring, but it'll probably be some kind of app. Maybe a homemade bacon-wrapped pate with crusty bread? Or maybe beef empanadas? Not sure, but I'll figure it out soon.

                    Muffuletta Salad - I loved it last year.

                    Elotes casserole - It's a hit!  I can't wait to try it.

                    mar52 - Don't fear the smoker.  Smoke a butt for Smoke Day (they are foolproof) and invite your friends and neighbors.  You will have a blast.

                            This is a request to everyone planning to attend the wonderful Smoke Day party...
                            One of my sons is doing a service project for his Bar Mitzvah that is a toy drive for Children's Memorial Hospital, where he had some surgery as a baby.
                            He is collecting toys for the children who are in treatment there.
                            The toys do not need to be expensive, but they need to be new so they do not pass on germs, etc.
                            They can be inexpensive, matchbox cars, coloring books, craft kits, rattles, etc.
                            They also ask that any DVD's are rated G, PG or PG-13.
                            The kids often get to pick out a "prize" after an especially difficult procedure or round of treatment.
                            I thought if anyone wanted to bring a toy along for his collection project he is going to be there and it could be a good opportunity for him to gather up a few more donations.

                                                  We are starting the final countdown to Smoke Day.  The meat is being defrosted, pie shells baked, and jello shots concocted.

                                                  I've finalized my menu of meats (pay attention, there will be a quiz) - 4 pork butts, 3 racks of spareribs, 2 beef briskets, 3 three pound packages of hot links, 6 racks of back ribs, 1 chuck roll, 3 six pound packages of chicken pieces, 1 turkey, 12 turkey drumsticks, 3 smoked meatloafs, and 4 redneck sushi's.

                                                  The Quiz - Guess how many pounds of meat I will be cooking (starting weight).

                                                  The Prize - First choice of pie to the closest guesser.

                                                    I'm thinking of some phyllo spinach and cheese triangles with Nueske's bacon. I've never made them before but if anyone enjoys pork in general and bacon in particular and Nueske's bacon for bacon, I'll try it. Anything tastes better with bacon.

                                                          You can guess all you want as to how much meat Jim is starting with.  More important to me is how much will be left when the sun goes down Saturday night and the Roadfood vultures have had their fill?  I'm thinking there will still be upwards of 30lbs., combined of all meats, bones, and fat.

                                                          Not that much really when you stop and consider that even if Jim starts with 200lbs. of raw meat, 50% or better will be water weight that will be cooked off during the smoking process.  That leaves 100lbs. or less to be consumed by roughly 40-50 people over the course of about seven hours.

                                                          I dunno Jim, maybe you should throw on an extra couple of slabs so no one goes hungry on Saturday.  Or at least to make sure that you and Bobbi have a few leftovers Sunday morning...
