Stew meat or cubed top or bottom round.
    olive oil
    flour, S&P
Carrots, celery onions and chopped garlic.
    tomato paste
    Red Wine
    beef stock
    thyme, parsley, rosemary, bay leaf
    salt and pepper to taste
I don't use recipes, I make it the way I want it to look and taste........
This is one version with the beef stew served open face on a piece of bread with mashed potatoes and hot vegetables. I like a bulk vegetable with a gravy based entree........Good luck.

    Looks fantastic Bill!
I add Parmesan Cheese, Poupon Mustard, and a hit of Worchester sauce, to Beef stew, gives great additional flavor!

I actually wrote down my recipe as I made it last time...I don't do mine with mashed potatoes, but rather cut them in chunks and put them in the stew. And I always make dumplings, although you don't have to. Here's my recipe:

    Before dumplings:

    With dumplings:

I've also never done steamed vegetables on the side...stew is, in my world, a one-dish meal. But I will serve it with bread. My favourite is my Guinness bread.

Just follow pnwchef's recipe.  It doesn't need dumplings!  But it could use some mushrooms.  I cannot make beef stew now with 'shrooms as MH is allergic to them!

Lisa, served like that, mushrooms would look great. The method I use for the stew is the same one I use for Braised Short ribs, I may use more wine for the short ribs, the sauce comes out nice and rich..........

Lisa and far as Michael and Mushroom go, I only have one word....Annulment................

    BEEF STEW
    Ingredients:
1 boneless chuck pot roast, about 3 pounds
Steak seasoning blend or seasoned salt and pepper
    1 medium onion, sliced
    8 ounces sliced mushrooms
1 can condensed French onion soup, undiluted
    1 teaspoon Worcestershire sauce
    2 tablespoons ketchup
1 can (14.5 ounces) diced tomatoes
    Preparation:
Rub the roast all over with the seasoning blend or salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides, about 2 to 3 minutes per side. Transfer the roast to the crockery insert of the slow cooker.
In the same skillet, sauté the onion and mushrooms over medium heat until the onions are lightly browned. Add the soup, ketchup, Worcestershire sauce, and diced tomatoes and bring to a boil. Pour over the roast in the slow cooker.
Cook on HIGH for 1 hour. Turn to LOW and continue cooking for 7 to 8 hours.
    Serves 6 with leftovers.

Michael...we need a "curmudgeon's weekend"......I'm in the same boat!  And unfortunately, the captain usually rules the menu even tho I cook it  ( Somehow she got 51% of the vote)

I always add a small can of V-8 for flavor & color.
