Packed parking lot at 11:15 am at a cinder block building. Order the specials. A wonderful wood smoke smell of BBQ from five miles away. "Can I see your pit?" "Come on city boy and see how it should be done...have a taste and a rib." Please add.

Hard for me to put a finger on it; sometimes it's just a feel. But, probably most of the places that caught my eye look "rustic", but clean. A lot of cars is a good sign, but then again, McDonald's and Taco Bell always have lots of cars...

A long line - with people smiling at each other while they wait. Food from any country whose cuisine I have never tried. If it is in a place that looks like a house, or is, a converted house. Wooden buildings. Everyone who works there is overweight. It is packed, and all the other restaurants are empty. I am still a sucker for words like "Mom's" "Aunt Sally's" "Best" and "Famous". A sign advertising that it has been in business since anytime before 1970. Harleys, pickups, or police cars parked out front.
