What Do You Stuff Your Calzone(s)/Stromboli With??

I have a loaf of frozen bread dough, and my parents are going to my brother & sil's house in Richmond tomorrow to exchange gifts.  I was going to make pizza, but about 8 months ago I made calzones with the frozen bread dough and the result was awesome!  It reheats better than pizza too.

What I have on hand:  mixed Italian cheeses (provolone, asiago, parmesan, mozz and romano), an Italian frying pepper (bell peppers were expensive), some cremini mushrooms, high quality pepperoni, bacon and kalamata olives.  I do pizza sauce on the side.

So my question:  to those of you who actually *make* your own calzones/stromboli, what do you stuff them with?  I've also made buffalo chicken calzones (hot sauce, grilled chicken, served to be dipped in bleu cheese dressing) and "ham rueben" calzones (black forest ham, swiss and drained sauerkraut, to be dipped in spicy mustard).

Ham, sausage, sliced beef most any kind of meat plus what you already listed. Except I've never put olives in one.

Do you bake or deep fry yours?

There is an Itialian chain in Fresno that deep fries them. God are they good that way. Then smother in sauce and mozzarella and toast until the cheese is browned and bubbly.

I only started making my own last year, and I currently live with my parents, who do not own a deep fryer and have a dislike of all things fried, lol.....so I bake.  I move out Monday, however, and one of my first purchases will be a deep fryer.  I will have to try it that way, thanks for the suggestion!

Change to the menu.  I'm making 3 small calzones rather than 1 big one.  #1 will contain beef, ham & pepperoni with cheese, #2 will be mushrooms, roma tomato, kalamata olives & italian frying peppers with cheese, and #3 will be an amalgam of both, beef, ham, pepperoni, peppers, olives, mushrooms & cheese.  Will try to get pics.

Lol, I was raised never having tried mushrooms, and married a man who couldn't stand mushrooms.  Now that I'm dealing with my own tastes rather than everyone elses, I LOVE mushrooms.  Raw in salads or sauteed for pizza, pasta & steak, I'm a convert.

I used to work at a mom n' pop Italian place that had the best calzones and the love that is Stromboli.

First, we would take the rolled out dough and dot with brush olive oil then shake pepper on the dough.

My preferences are italian sausage, hot gardenera, black olives and plenty of cheese.

We also made a calzone with ham, 1000-island dressing and cheese.  That was popular.

I like the same kind you buy in pizza stores. Ham with cheese, pepperoni with cheese.
    I really like the pepperoni.

I did one recently with chopped ham, artichoke hearts, red onion,  tomato, kalamata olives, & feta, provolone & romano cheeses, then brushed with garlic butter.  It was yummy.

I rememmber first seeing Calzones in Berlin.  Back in the 70's Berli was a choice of pizza. chinese or some middle-easten stuff.
I was shocked my first ammmmmerican calzone.  The Berlin version was a pie halbaked, then folded over and smothred with cheese and sauce and finished in the oveb.  Quite tatsy.
