hi 5 wabbit! crumbled bacon (well done) and I klike to add blucheese crumbles with the dressing ( never crumbly enough IMO)

I recently had dinner at a friends and his new wife, she made large burger patties and served them (sans bun) with a white gravy, sorta like sausage gravy but with lots of fresh ground pepper and thick tater wedges (also covered) wilted greens with a vinager dressing and for dessert, hot chocolate pudding over buttered biscuts

Finely chopped rosemary and garlic in butter (salt & pepper). Cook burger first, put sauce over top toward end.
Place on a toasted poppy seed hard roll with a tomatoe slice!

I may be repeating myself but. . . .

Short and simple, from the bottom up:
  • Bun
  • Mustard
  • Ground beef
  • Salt & pepper
  • Dill pickle
  • (Optional: a slice of Cheddar)
  • (Optional: bacon)
  • A little lettuce
  • Sliced tomato, but only if good ones are available
  • Maybe a touch more mustard
  • Bun

I love Patty Melts. They are the greatest burger out there. Grilled rye with two slices of Swiss. That is important, as some places will use only one slice for other burgers. Add sauteed onions and you are there. I like ketchup on burgers, so I will use some.

I like Swiss on any burger, so that is pretty consistent. A sturdy bun to build on so I can add bacon, lettuce, onion, tomato, ketchup and mayo, or sometimes 1000 dressing. I'm starting to put a fried egg on them occasionally.
I build my burgers starting with the veggie parts on the bottom. The lettuce prevents the juices from soaking through the bun.
A good burger requires that onion rings and a chocolate malt are served alongside it.

It never dawned on me that mustard and ketchup weren't standard fare on burgers all over this country of ours. What's liked and disliked on hamburgers in your neck of the woods?
This is a spinoff from the White Castle thread's revelation that ketchup and/or mustard are not standard fare on burgers in some parts of the world, at burger joints and at home.
I grew up with regular old mustard, ketchup, and sometimes pickles, onions, and cheese. We had a few places in KC that served German-style mustard at the counter,(Frank Wachter's Grill) but that was the height of sophistication.
Mayo and the Secret Sauces were for the special issue burgers from the chains. stuff like the Big Mac, Whopper, etc. Tomatoes were an adult thing, along with lettuce. All this other junk on top or inside?.... well, no thank you sir! What do you put on YOUR burger?

i did the white castle way last night but i used a 1/3 pound 85/20 burger in the iron skillet....a little cooking spray 1/4 of a diced vidallia onion little salt/pepper layed burger down with holes in like theres more salt and pepper let it on med. flipped it (didnt steam roll just used off the shelf hamberger bun) ate it just like that and wow was very impressed. that simple way they do it was awesum.
now for the regular way i usally do em straight aka salt pepper maybe some season all with a slice of sweet onion and a thick slice of garden tomato (old germen or brandywine gets a hell yea)i have 38 tomato plants 10 different lotta airloom they are ugly but taste so good.
HELL A GOOD BURGER DOESN'T NEED ANYMORE THAN THAT!!!!if its good burger and cooked right....like the old saying you can cover crap with a blanket but its still crap....

Depends on where I am.
If I'm at Harry's in Colchester then its:
Ketchup, Mayo, Hot Peppers, Tomato, Lettuce, Bacon, Cheese and Pickles
Anywhere else, usually just cheese, Lettuce and Tomato, mustard and ketchup.

If blue cheese is on the menu, that's all I want -- sometimes a little ketchup, too.

Otherwise, American cheese, ketchup, sweet onion, pickle and a slice of tomato, in season.

onion (can be raw or fried, depending on my mood)
pickles
ketchup
mustard (either spicy or honey)
cheese (prefer cheddar)

I've pretty much settled on the above and don't vary from it very often at this point; with the exceptions of having an occasional patty melt, preferably with cheddar. I don't like Swiss.

Grilled Bun (buttered & a bit crispy) An Onion Roll does fine!
2 patty's of flavorful burger (not Huge, about 3 oz each) Lightly salted.
1 Thin slice of cheese between the pattys
2 or 3 pieces of crispy Bacon 'crumbled" into the cheese and allowed to melt into the cheese slice.
1 slice sweet onion or red onion raw (fairly thick slice)
If available- 1 slice large beefsteak tomato
If Not available- a bit of ketchup on the onion slice.

That should do it for me.

Unless I am in New Mexico and eating one of those amazing green chili cheeseburgers, I consider the less on the burger the better. Cheese and ketchup only, with bacon and mushrooms being only occasional toppings.

On my burger: Bacon, American cheese, jalapenos, onion, lettuce, ketchup, and maybe I'll throw some fries on it if they are good enough. The ones we make at home are peppered with sliced jalapenos and garlic, and they grill up very nicely. A toasted sesame or poppy seed bun is preferred. Medium-medium rare.

I know this will sound a "little weird" but the best burger I ever had was at a little hole in the wall restautant up in Manatee Springs, Colorado-they had a chef working there for the summer and his special for the day was a burger topped with homemade chili and a very special cole slaw- it was the Best Ever! Th next year we stopped in and were not so surprised to learn he was no longer there- had saved his $$$ and was at Culinary School! His potato salad wasn't bad either, made that with baked potatoes- you know, it was a bar sort of place, and so what would you do with the insides from your bar food potato skins? Make salad, of course!

Rarely eat a burger but if I do...

Burger: extra lean ground beef or turkey
Cheddar cheese
Diced red onion, or white if no red is available
Couple of jalapeño slices
Black pepper and a touch of seasoned salt

And that's it... no mustard, ketchup, tomato, or anything else.

I may have answered this but I like to mix it up .I will always go for sauteed onions, or better deep fired onion straw is available, but the standard I know I can get it anywhere and be happy burger would be: bacon cheeseburger with mayo, onion and pickle. I like ketchup on the side to dip the burger into to minimize the wet ingrediants gushing out the side onto my hand.

But, I am not a stickler, I'll try many toppings.

I agree with it all. I made a "special sauce" the other night much like the Bob's Big Boy Sauce (white ). It's similar to tartar sauce but I put some "bam" into it and boy was it great. I did a search online for the recipe but it calls for a hard boiled egg!!! Call me crazy but I don't remember Big Boy sauce with a hard boiled egg. That's why I did my own version.
