What To Do With A Whole Beef Tenderloin

Do you know what to do with your cuts of meat?
Some of us do, most of us don't.
You can save a bunch of money by buying large cuts of meat.
Here's some tips on what to do with a whole Tenderloin.

    Nice.....but that silver bit with the meat attached can be simmered for a great broth

    Looks Yummy......I do something similar, but using my Epson pressure smoker, I cold smoke a couple of whole garlic cloves with the tops cut off for 10 minutes and then hot smoke for another 10.  After they cool, the skins come right off and the garlic is a nice "mushy" texture easy to spread on the beef

    Foodbme - Follow these instructions.
    1. Wrap tenderloin in freezer paper and freeze.
    2. Pack in dry ice.
    3. Ship the meat to me.
    That is all.

    IMHO, The only person in my kitchen that trimmed a whole Beef Tenderloin is me. I have seen people screw this up royaly. It takes a sharp knife and a lot of patients to get all the silver and fat off. Most people will not take the time to do it right. In this video this guy shows a Beef tender for $12lb, if he has two pounds of waste  that price goes up to $15.42. Now he has meat for kabobs and sirloin tips that cost $15.42 lb. Most people would be better off buying what they want,when they want it..............
    I'll be doing a  Chateaubriand for Mother's day. I rub it down with some oil, garlic, salt and cracked pepper and give it a quick hit on a high heat grill to put a little char on the outside. I then bake it to 120 degree. I let it rest for 15 minutes for a perfect rare to Med rare piece of perfection. I serve it with a Bearnaise sauce, thats what my family likes...........

    Yep, that's the way to do it. Or, you could put it between two round steaks and cook till the round steaks are burned and the tender is perfect.

    That guy's trim job on the tenderloin looks like a train wreck!  You shouldn't even have any meat attached to the silverskin!!  Heck, he didn't even take all of the silverskin off.  And he's going to use the chain for steak tips?  There's sinew running all through it.  Rookie.  Sheesh.

    When I was a kid working in my father's meat packing plant, if I'd done to a steer tender what the guy in that video does I'd have been killed. And lleechef's sure right about the chain.

    A very good friend of mine owns a 500 head limosine cattle ranch in Clinton, TN  He was my boss for 45 years in the plasma business.  He was having a cattlemen's association at his home with about 50 ranchers invited throughout the south.  He slaughtered one of his prize bull's and told his wife to tell the folks who did that to grind it into hamburger but not the tenderloin.  She forgot that point and they had burger with prize beef?  Needless to say that the attendees enjoyed the burger grill.

    Was it a bull or a steer?
    Bulls tend to be tough but Steers are generally raised as Beef Producers.

    I've seen worse things being ground up for hot dogs......like tenderloin silverskin and miscellaneous other trim!
