Michael Hoffman For spaghetti I use spaghetti. And I use linguine for linguine. When making penne rigate I always use penne rigate. what Mr. Hoffman said

Linguine is my choice for a ... butter, garlic, cheese, shrimp pasta dish. I will be careful what I call this but... hey, it's good! Joe

susanll Creamettes. Cant' get them here, tho. I have used all the brands mentioned, at home and professionally, but I too have a real soft spot for Creamettes. It would compete well in a blind taste test against all that has been mentioned. It does have a great 'tooth feel' when cooked. I guess that since it is American made, it is perceived that it can't compete against the Italian brands, that is a wrong assumption. I can't find it here either, but I used it in California for home cooking. I had a choice and I chose that... mark

I think the brand or type of pasta is not as important as the sauce. To me the sauce is what makes the dish, not the pasta.

Bronze dyes leave a rough surface on the pasta that helps sauces cling better. Therefore I much prefer them but cannot find them that often. Trader Joe's has them once in a while and I stock up when I see them. One of the bronze dye pastas , that I can buy at Trader Joes, is a spaghetti which is two feet long and the grandchildren love to have that when we are having a giant meatball. It is a fun meal for them.
