What are some good ingredients to make a burrito more healthy?

I love a good burrito, but I realize it's not a good idea to be eating guacamole, sour cream, melted cheese and beef everyday. What are some substitute ingredients to make a healthy (veggie?) burrito?

    Well, guacamole has a lot of fat. I mean, it's good-for-you fat. But you probably don't want to be eating it every day. Well, if you're like me, you do want to eat it everyday. But you probably shouldn't.

    I agree with Davydd. Throw some beans in there. And some tomatoes.

    When the visiting Northerner asked his Southern host "This barbecue is delicious, but is it healthy for you?", the Southern friend reflected a minute and answered "Not if it's made right..."
     
    Seriously though, just enjoy the darn burrito! If you're haunted by fat grams, use lean meat/drain well; use beans; use fat free sour cream; bulk it up with a bit more tomatoes, lettuce, and onion; and just enjoy the guacamole, it's not like you have a whole pint on each burrito!

    Anything that's considered "Health Food" can be put in a Burrito. Try a Tofu Stir Fry Burrito

    calabacitas: saute onion and poblano peppers in olive oil, add zucchini and yellow squash and cook until fork tender. i like to add fresh corn and/or chopped tomato.

    Although I would never use it (since I avoid Textured Vegetable Protein whenever possible), you could use something like these "Beefish Bits"  http://www.harmonyhousefoods.com/TVP-Meat-Substitute_c_6.html  instead of ground beef, with low-fat shredded cheese, non-fat sour cream, and, like improvisor said, throw in some refried beans (3 g. fat per serving) or just cooked and mashed beans, and chopped tomatoes (or some salsa).

    We use roasted vegetables.  Portobello mushrooms, bellpeppers, onions and zuchinni tossed with a little olive oil and spiced up like fajita meat and roasted in the oven.  Make a fresh salsa and a couple of slices of avocado.  We also use a wrapper called Flat Out, its a not so bad for you flour tortilla looking thing.

    tortillas are the unhealthiest  part of the burrito, extremely high in fat, you are better off eating whatever you use to stuff them with a fork.

    start with a whole wheat tortilla... i like ground turkey for the meat, along with low fat cheese, FF sour cream, baby spinach leaves (better than iceberg),  tomatoes, roasted peppers and plenty of beans!

    BTW, commercial flour tortillas are not high in fat; not necessarily low calorie. I found this out from a webpage of  a tortilla machine manufacturer, so as not to be accused of spamming!!

    "Nutritional Information:
    Flour tortillas are a low-fat food and contain iron along with other B vitamins. They have about 115 calories with 2 to 3 grams of fat per serving."

    If you use chapatis, i.e. Indian whole wheat flat bread, they make delicious tortillas without any fat. Try them and experiment. They are made from chapati flour, a whole wheat durum flour, also know as atta. Just ground durum wheat, partially sifted. Water and atta flour, kneaded, rested, rolled, roasted.

    As a burrito is a hot product, I don't think guacamole, or sour cream belong inside a hot product...or lettuce for that matter (hate gooey brown guac, and wilted lettuce in a burrito...). I make chicken burritos with left over chicken saute'd in chicken stock with onions, garlic, salsa, cilantro, chili powder and cumin. I cook it slowly until the stock is gone. I puree black beans with olive oil, salsa, cilantro, chili powder and cumin. Shmear the tortilla w/ beans, add chicken and grated jack cheese, bake until slightly crispy, enjoy with wine or beer...or guacamole and chips...skip the sour cream.
