What do you add to potato salad?

What do you add to potato salad?

In my area, sweet pickle relish is commonly added to potato salad--something I'm not real crazy about, but I manage to get thru it all right.

Is that a common ingredient in your experience? If not, what do you use (other than mayo, eggs, and potatoes)?

    I use diced home-made bread 'n butter pickles, along with some of the onions (diced) and juice from the jar, a little minced onion and/or celery. Both the whites and yolks of the eggs, of course.

    I like the relish thing. I also generally put in some mustard, celery seed (because most recipes of my aquaintance call for chopped celery but I don't like raw celery) and chopped green pepper. And I skip the egg whites and instead use just some cooked egg yolk mashed with the mayo.

    Beginning with the basics (potato, hard boiled egg, onion, Hellman's, salt and pepper, I add whatever comes to mind and have in the fridge, i.e., dill pickle, green/red pepper, cucumber, maybe diced or julienned radish, celery, capers, maybe a dash of yellow mustard, and always dill, either fresh or dried. Love dill in potato salad.

    If lacking any or all of the add-ins, the basic recipe is always good but always with the addition of the dill.

    In addition to the usual contents, my mother always sliced a few stuffed green olives and put these in her potato salad. The olives added an extra taste to the already very good salad. Unfortunately my wife hates olives, so guess what she won't put in her potato salad?

    I don't care for sweet pickles in my potato salad either. I always use chopped dill pickles, and I like mustard and mayonaisse both in my salad. I also add chopped onion, chopped celery and chopped boiled eggs, salt and pepper. And of course, I sprinkle paprika over the top.

    Mine consists of Potatos, Finely diced ham, finely diced pickle (Kosher Dill), finely diced onion, sour cream, Mister Mustard (hot version), sour cream, chopped up egg and mayo. (salt and pepper to taste of course)...

    Plenty of Onion and Bacon...real Bacon pieces not the shaker of fake bacon 'bits'.

    My wife HATES any pickles in potatoe salad but i like the flavor contrast and decided there had to be something i could add that she would like instead---and there is---diced granny smith apple---and i like it even better then the pickles!

    A spoonfull of horseradish mixed in the mayo adds a nice touch to potato salad.

    Mayo, squirt of mustard, about half cup sour cream(depending on how much I'm making and hey sour cream always goes good with potatoes))chopped purple onion, prefer celery, husband likes relish so we take turns, celery seed,(I also add yellow onion to the water in which the potatoes boil)chopped boiled eggs, salt, pepper, and cayenne pepper to taste, some sliced boiled eggs and chives on top for appearance, I think that's it....I really like my salad to have some color. I do macaroni salad the same way with the exception of adding onion to the water in which I boil the macaroni.

    I fry bacon and onion and add all including the fat to warm potatoes. Chopped kosher dills, dijon mustard and mayo are then tossed to the right consitency. Bring the seasoning up with rice vinegar, salt and hot sauces. Grilled ham makes a good side dish.

    Correct me if I'm wrong, but I think you're referring to the thread on GERMAN (warm) potato salad which is a different thing. I love 'em both but they are different. I eat cold mayonaise potato salad (with pickles, mustard, green pepper, raw onion etc) in summer with BBQ or burgers or what-have-you out on the patio or at a picnic. I eat warm German potato salad (with cooked onions, bacon, vinegar dressing) in fall and winter with sausages or schnitzel or some other suitably middle European fare--indoors. Not that I'd restrict how anybody else eats their potato salad but I'm just trying to point out how different the two styles are.

    Now actually, the notion of putting bacon bits in a mayo-style potato salad intrigues me. But when you referred to the "other thread" it led me to believe you didn't mean that. Did you?

    That sounds like a synthesis (and one I was unfamiliar with--since it's good to learn new things I appreciate your posting it) of the two kinds of salad I referred to. So do you eat it warm or cold?

    I like it at room temp. maybe a bit cooler. The reason for mixing warm for me is the bacon drippings and mayo are absorbed by the tater. If its too cold the fat does funny things on the roof of your mouth. I like the summertime for veg salads at room tempurature.

    I've always thought about backing off the Dijon a bit from my recipe and adding Horesradish! Always have atleast a small bit of it in my fridge. (As long as it's not that pureed stuff that seems to be taking over)..

    I like it with Feta cheese, some cut up Kalamata olives,green peppers,red onion,cucumber and 2 cloves garlic. I use boiled red potato's with the skins left on. Juice of 1 lemon, dash of herbs some salt and pepper and good extra virgin olive oil. Serve cold.

    It pretty healthy and taste's great...

    My Mom always puts pimentos in hers. My Aunt uses fresh chopped dill instead of dill pickles.

    Just wanted to say thank you for all the ideas in this thread - last night I combined some of the suggestions and made a great potato salad - red potatos, bacon, sour cream, sauteed red onion in the bacon fat, celery salt, paprika, s & p - it was very good. Had it with one of the last true Jersey tomatos of the season for BLT's. I will be so sad when they are finally all gone....

    LOL --for the longest time, my potato salad was "off". yucky. I should've read here a long time ago then I would've realized I was leaving out the BOILED EGG of all things.

    sometimes I use little red potatos to make potato salad. when I do, I add just a bit of rosemary as well.

    and aleswench, I've heard about those famous jersey 'maters. a delicacy I have yet to try.

    but now I'm off to find that German potato salad thread. afterall, it is Oktoberfest around here.
