What do you want in your Taco?

Tacos using soft corn tortillas are my new favorite way to get creative in the kitchen.  Things like spicy chipotle buffalo chicken or bbq pulled pork with fresh slaw, or cinnamon spiced butternut squash and roasted apples.  I'm always looking for new ideas, so what do you want in your taco?

That's almost exactly what I do, but have never tried the radish with it. Next time definitely. I like a couple squirts of a hot sauce like Tapatio also.

I prefer the classics:  Lengua, cabeza, and tripa.

When I buy tacos at Don Jose's in Ocean City I get the tacos de lengua.   Don Jose knows that when he sees me come in.  But at home I don't use tongue.  It is very hard to find around here.  I did find a small one not to long ago, but ShopRite wanted $43 for it.

My fave place for tacos and enchiladas just got bought out by someone who bought the building and will bring in an "upscale" Mexican.  I loved my fave place because I could get a good al pastor taco with onion and cilantro, they had great home made salsa, again heavy on cilantro and onion and a great tomatillo sauce in a squirt bottle that you can add. Sad because a nice family ran it. I hope they open somewhere else.

A good Salsa Negra makes everything good.
 
Add chopped pickled jalapenos and diced onions and they're wonderful.

There is a restaurant/microbrewery here in town that does a taco (well, a fajita style plate) with andouille sausage marinated in brown sugar and molasses, then fried up and served with a spicy mustard and tortillas. I haven't had it yet, but it looked really good when they featured it on Diners, Drive-Ins, and Dives. I usually just go there for the beer, they have a couple really good ones.
And I've been known to make Thanksgiving leftover tacos also. Nuke the leftovers, and put it in a tortilla... turkey, mashed potatoes, stuffing, cranberry sauce, and topped with gravy. Spectacular.

Recently got a tortilla press and started making my own corn tortillas (idiots around here think soft tacos are made with flour tortillas...subsequently the stores in my neighborhood stopped carrying corn tortillas)...I have made beef, chicken and pork tacos and chicken enchilada's (killer enchilada sauce recipe from Bruce Aidell). Beyond that I haven't gotten too wild. I will be making fish tacos soon. Of course I've also been making tortilla chips for quacamole and tortilla soup...

I also know that putting Ketchup on ANY meal is a sure fire way of ruining it!  
Seems to me that we had this conversation a long time ago over at another Forum! 
The ONLY thing Ketchup belongs on is French Fries and only then if you add a bit of Tobasco sauce to it!

Give me seasoned meat and shredded cheese in a shell or tortilla (maybe a little sauce or smooth salsa) and I'm happy.  No veggies, no cilantro, no guacamole.  In fact, that's what I plan on doing with a pound of ground beef this evening.

:)  Fish tacos are definitely on the menu!  My favorite is blackened rock fish and homemade pico with lots of cilantro.  Halibut in a light curry sauce isn't bad either.

Where some of you folks come up with what you think is Mexican food  astonishes me!

Hey, I know all there is to know about Mexican food. I even had a can of Hormel beef tamales a couple of weeks ago.  It went really well with my Chef Boyardee beef ravioli and Armour Vienna sausages.


Those tamales are hard to find, but I always grab a few cans whenever I see them.

Tonight's tacos...  3 corn tortillas heated up in a pan with a bit of oil.  Smeared with perfectly ripe Haas Avocado, sprinkled with some sort of a seasoning salt and dripped with Green Taco Sauce.  One had cheese melted in it first but I didn't taste the cheese so I didn't waste the calories in the other two.
 
I would have added minced onions if I felt like mincing.

Mar and Edsails are my go to people in Socal, they are both out to give the best info they have on Mexican food and all other foods. I never found them to be know it alls, just people who know what they like and where to get it............Thats good by me..............Caring people helping other Roadfood members make good choices..................Bill

Leechef is exactly right. My tacos at home are made from whatever fresh fish the market has that day. Favorites are halibut, red snapper and mahi mahi. If they don't have that I can always do it with tilapia. I chunk it up, marinate it in a blend of chipotle, oil, lemon, cayenne, black pepper and salt for about 10 minutes. I blacken it on a cast iron flattop. I serve it with sliced cabbage, lime, pico de gallo and a sauce. The sauce is (don't laugh) ranch dressing with a good dose of Tapatio or Cholula hot sauce. Delicious! I'm thinking of dinner tonight now......mmmmmm.....

Not a bad idea. I've done Franco American spaghetti tacos and Dinty Moore beef stew tacos. And I just happen to have a can of Chef Boyardee beef ravioli on hand.
