Morrocan omelet???

    Here's one:

    8-10 eggs
    1 lb. potatoes
    1 can peas and carrots
    1/4 cup chopped parsley
    Salt and pepper to taste

    Boil the peeled potatoes then mash coarsely. Add the peas and carrots, salt and pepper and chopped parsley.

    Add the eggs one at a time and mix them in with a spoon.

    Spray a large springform pan well. Pour mixture into the pan and bake at 375°F for about 45 minutes or until the omelet is golden.

    Allow to cool a bit before unmolding.

    I was trying to find the recipe for a local forum in my area. Seems that a "new" restaurant in my town is selling these @ about $7.95 ea. I can now safely avoid said establishment.

    I guess this was just one version. I'm sure there are more. It sounded to me sort of like a fat fritatta. Or is that frittata?

    Having been to Morocco several times (but never had an omelette there) I would suppose the ingredients would be: merguez, harissa, onion, zucchini and goat cheese.

    That sounds a bit better than Michael's rendition. You can keep the Feta cheese, though.
