well I like 20% fat from a ground chuck..................... and my favorite burger joint is In-N-Out and the three things that separate In-N-Out from the rest are the Rocky Mountains, the Great Plains and the Mississippi River. My favorite buns are on actress Pamela Anderson .....and I don't like fries ............... Frank

    1. I too like the 20% ground chuck ratio.
    2. Three things that make my fav. burger joint (Big Spring Cafe)apart from others is (1) the way they cook their burgers hand patted (on a greasy grill) smothered with onions, (2) the fact that I can order my burgers different each time if I want (extra grease, w/or w/out condiments, and (3) that the burgers taste the same every time I order one; weather it be the next day or it has been months since I've been there (they haven't changed the way of frying their burgers in over 40 years).
    3. If prefer hand cut fries that are double-fried; but hard to find these type around here so I usually don't order fries.

The more fat that drips onto my chin the better the burger. About a 70 to 30 percent fat to meat ratio.Along with a couple of slices of cheese and a few strips ob bacon it doesn't get any better. We call it the heart stopper special.

I like the 73/27 ratio I can get at the local grocery.

I like Red Robin because they make a great messy burger (The Banzai), they WILL cook it rare when I ask them, and they have halfway decent fries. But it's a chain and therefore not taken seriously, and I know the quality factor differs greatly between them.

I like sesame seed buns, and I don't particularly like fries. Rarely eat them. Prefer to get a salad instead.

    1) Three parts fresh ground chuck and one part fresh ground sirloin.

    2) Hand-shaped with only fresh cracked pepper and course sea salt added. Broiled over Kingsford charcoal fire.

    3) Fresh soft bakery bun with a little "chew" to it.

Sauteed mushrooms and onions in wine and butter, or a thick slice of white onion to top.

    Works for me.

    A better question:

How was Rustywolf able to sneak a double posting into the middle of your triple post?

Since Rusty got caught up in it too, I'm hoping it wasn't my fault.

I like 70/30, dark rye, lots of grilled onions, choice of cheese, crisp bacon and tomato flavorful enough to eat on its own. None of the flavorless pink ones.

Fresh ground sirloin ¼ lb.. With an 80- 20 fat content hand pattied to ¼ inch think and cooked on a flat grill with reconstituted onions after turning the patty only once. Toasted egg roll with the heal placed on onion and patty on grill.
The burger dressed with mayo, leaf lettuce, fresh tomatoes and butter pickles.
