    You don't need a mop sink, or a utility sink, and you only need a 1 hole veg sink.
    What's their thinking on 8 sinks?
    Ask them to show you the RCW that states you need 8 sinks.

        I would put a bath tub next to the three bay sink, cleanliness is next to godliness

          My local health-dictator believes it requires 2 for veg washing. RCW says "appropriate veg sink(s)"
           
          Some of those I threw in just for giggles. If I serve booze, and include a bathroom, I can add another 6 sinks (four for glass washing, 1 handwash, one bath handwash). I think I should include a bar in my drawing. 
           
          Honestly, I still need to have a long discussion with her, but it looks like she's going to interpret the law in the most expensive and ridiculous way possible.

            I've worked in several b&m restaurants that didn't have sinks for washing veggies and we never had problems with the hd. A deep plastic tub set into the dishwashing sink was deemed more than satisfactory at preventing cross-contamination.

              washington state goes overboard when it comes to street food vendors... this is due to complaints from brick-and-mortar restaurant owners who feel that street vendors are stealing all of their business.
