My neighbor is doing his annual Turkey tamales. He is doing them a bit like pork tamles except he is grinding his left over turkey and making several Mexican like tamales with the small cigar shape.

I suppose you cannot tell the difference but I will let you know.

      IF they are leftovers<
      I like to make green chile turkey enchiladia's SP?, OR turkey tacos
      Or turkey and leftover gravy over rice.

        I follow the Pampered Chef recipe for the Turkey Wreath.
        It's like a turkey salad stuffed into croissants that are shaped into a wreath ~ yummy!

              Someone said everyone makes turkey soup, and most of us do. I got a hint off this site about roasting the carcus before adding it to the stock pot.
              I now do this and add some vegtables at the end of the roasting process to add another depth of flavor. This method has taken my turkey soup to a whole new level and I look forward to it. Chow Jim

                But, I will share one with you anyway, besides the ones for turkey mentioned in my original post.

                Perfect for appetizers or a sandwich.

                Deviled Eggs and Ham
                2 cups chopped cooked ham
                1 dozen hard boiled eggs cut in half and yolks separated
                Mayo or Miracle Whip
                Finely minced onion (to taste)
                Salt, Pepper
                1 small jar pimentos (optional)
                Sweet relish (to taste)

                Process ham in food processer.
                Put in large bowl and add all other ingredients.
                Stuff the eggs, sprinkle with paprika, and use the rest for serving on crackers, crostinis or sandwiches, or even stuff into fresh celery stalks.

                      We didn't have much in the way of leftovers, which surprised me because there were only 8 people and a 19# turkey. I made stock last night and it is the richest turkey stocks I have ever made. If I took the stockpot out of the fridge right now I could up-end it on a platter and have a perfect turkey flavored gelatine mold. :)

                      We have just enough turkey left for soup tonight with noodles and that's it. I got probably over a gallon and a half of stock though. I wonder if I could make Thai chicken soup with turkey stock ?

                            I just finished up (well, almost!) the turkey in making a turkey tetrazzini. Must admit that I also just tasted it and it is delicious!! I think it's my favorite thing to make with leftover turkey.

                            I've still got plenty of ham, which will probably mostly be used for ham sandwiches. We'll probably have some mac'n'cheese w/ham too. The green bean casserole was finished up on Friday evening--boy was it good!

                            I think I might get some turkey breast cutlets next weekend and make some turkey white chili.

                                  Actually the other night I made the following pasta dish
                                  To a jar of store bought tomato vodka sauce (the creamy kind)
                                  I added finely diced leftover turkey (i'm guessing 6 oz?)
                                  finely diced leftover roasted brussels sprouts with cranberry brown butter! (maybe 1/2+ cup)
                                  warmed it up to mix the flavors for 5-10 min
                                  The kids didn't even realize they were eating VEGETABLES!
                                  HAHA!
                                  They loved it and ate it up over linguine!

                                              I was at a friend's house last weekend and made 2 soups - Turkey vegetable for the lady of the house who is watching her diet and a really rich Turkey Corn Chowder (roux made with BACON FAT!) for the rest of us.

                                                I did a search on the words "turkey leftover" and found this thread with many interesting ideas. In addition to leftover turkey dinner and turkey sandwiches, we also make soup and turkey pot pie with our leftovers.

                                                  the usual suspects - turkey soup, turkey chili...
                                                  this year i'm going to roast my turkey carcass, and then make gumbo with it. leftover turkey gets chopped, mixed with leftover stuffing, and made into patties that get fried in a little butter and served with eggs for breakfast (makes a mean sandwich too)...

                                                    I save enough turkey meat to make a few sandwiches and the rest of the carcass gets made into a turkey jook. Some gets eaten right away, the rest gets frozen for a future dinner.

                                                          I beg and bribe guests to take the leftover turkey home.

                                                          If they do not want to take the leftovers, I get into the car, and drive. I find a nice family of cats, who did not have luxury of enjoying their own Thanksgiving, and I set the table, for them.

                                                            Turkey casserole. I like to make a fresh batch of dressing, mix in gravy and pieces of turkey, and bake it in a Pyrex or similar dish until it's hot all the way through and the top is nice and crunchy.
