As for regional items on fast food menus, I'm sure it's come up in other threads but for the past several years MacD's has done a lobster roll in the Summer in New England. Never tried it, but the reviews say that for the price it's not bad. D'Angelo's, our regional sub chain does one as well.

In the 60s, there was a Rhode Island mini-chain called Kelly's (NOT Kelly's Roast Beef) that did R.I. clam cakes. Not a cake, and barely a clam, but a ball of fried dough with a few pieces of white rubbery "clam" inside. Kids went nuts over them.

I concur with the Mayor!
I love Red Cabbage. I buy the stuff in the jar for a reasonable facsimile. I just doctor it up!
But I would love to see Fried Green Tomato's on a regular basis.
Even in Florida, they are not that common.
I know they are all over the place in the deep south.

Yes Red Flannel Hash is my favorite part of a boiled dinner. I generally use a smoked shoulder rather than corned beef. Use it for breakfast with a couple of dropped eggs on it, or lunch on home made bread nice and crispy with melted cheese and add onions to kick it up a notch great sandwich. Or dinner left overs just by it self. Cast Iron skillet is imperitive to get the required results. Chow Jim

fried mushrooms ok, but fried zucchini even better. never thought to fry a banana pepper, but yes, I'd probably try it! Many places do not have a fish sandwich, or a good one, so how about that, too. I'm not a pickle fan, but I think most people would like a fried one--and with some nice dipping sauces, too.

Does anyone have specific directions on how to make an onion loaf? If you've never had one they are a deep fryer basket crammed with onion slices (can't remember if they were breaded or not) and deep-fried. I had them long before onion blossoms, and I loved them.

A good bowl of chili w/o beans. Wendy's tries but...... I am kinda surprised none of the other big chains has not tried to do chili.

Hmmm. Not sure what this is doing in the FF forum since I wouldn't expect the chains to add much of the following or do a good job if they did .

The lack of variety in FF menus is as good a reason as the quality of the food to avoid the places; all of the following are available at local eateries, many with drive-thrus, some with multiple locations but not really chains and are part of the reasons I chose to eat there:

Sides: Greens, Red Beans n’ Rice, Dirty Rice, Jambalaya, Elotes Rostadas (roasted corn on the cob), thick cut onion rings, lima beans, yams, green beans. Heck, I’d like to have the option of p-chips, p-salad and mac ‘n cheese with a burger, instead of just small, medium and large fries, more fries, biggie fries, supersize fries and jumbo fries.

Entrees: Frito Pie, smoked sausage po-boys or sandwiches (hot dogs are not big around here) lasagna (!), fried meat pies, salmon croquette burger, grilled cheese sandwich.

Their chili went away along with their "baked" potato a long time ago, at least in my area. Thank GOD. Too bad BK just can't cook to order anymore.

I assume the OP cares about the quality of the items offered. This would add variety to the items offered at ff establishments. Which is why it is here.

If they can get it right I'd like to see okra, fried tomatoes and stuffed peppers/cabbage. Also cheese steaks, Italian Beef and roast beef.

Most of the choices mentioned sound good to me. Except fish and mushrooms.

Being as I'm a night owl, I wouldn't want them to sell anything diff...but do the whole 24 hour thing. I hate only having McDonald's as a fast food option past midnight.

Squash Spears Same concept here. We find places here and there that do 'crosscut' slices like pickle chips that are battered in a Tempura-like batter and fried. Those are good, but the long spears battered like the Onion Rings at FB's are outstanding with your favorite dipping sauce.
Mushroom Caps Same thing.
Pickle Slices, both Dill and Sweet. I had never had these before coming to Louisville. Great with a Burger as another side treat.

I love them all, but add Fried or sauted Chicken Livers to that menu and I would think I had died and gone to Heaven.

For menu entree items...
I like to find good Liver and Onions. Too often the Liver is sliced 1/8th of an inch thick and fried hard. Nasty stuff. Give me a piece or two 3/4 inch thick or slightly more and cooked medium--not Medium Rare. Lots of grilled onions and bacon served with/on it.
I like Welsh Rarebit. HoJo's used to have a pretty good version. Fresh Toast and double the Bacon then ladle the hot cheese sauce over it. A good Hot brown comes close, but the Cheese sauce in the W.R. seemed to be a bit 'stronger'.
Sweet and Sour Red Cabbage makes a great side dish for a lot of Meat and three kind of meals. I guess it is a holdover from my Czech upbringing. I love the stuff.
Lastly Avocado, in almost any form...Whole Sliced Mashed etc. I love them. Offer them as a Sandwich Condiment and I'll order them every time.

Update: BK does have chili. Last night after the dog park, we got takeout from BK because it's close to the dog park, we had no "meal food" at home and didn't really want to take the dog home, go to the grocery, come home, put away food and then cook dinner.

It's rare that we eat fast food, but last night was one of those times.

Fried Pepper Rings.

You take a bell pepper (usually green, they're firmer), cut it into rings, batter it
and fry it, just like an onion ring.

There was a restaurant outside of Rochester, NY (Tom Wahl's in Avon) that was
famous for this, but when they franchised, they dropped it from the menu.
Or, at least, kept it only out in Avon. Most likely because it was hand-made, and
they didn't have the space or fortitude to carry it out at the franchises.

Much like fried pickles, once you try pepper rings, you don't go without it.
If only it would catch on. I guess because they can't buy by the frozen bag,
the chains won't do it. Which is probably a good thing.

Carrols, a chain that merged with BK in the North East, could have a guy spend
his whole shift peeling and slicing potatoes for their french fries.
Of course, that meant you may not get uniform quality.

You would get better.

I love good fries, but I wouldn't mind having the option of onion rings or cole slaw at places that currently don't offer them. Other fried veggies would be nice, too.

We are pretty lucky I guess. In the Louisville area in addition to the Mickie D's that stay open 24 hours, The White Castles do also, and many of our Dairy Queens are also 24 hr stores. The Rally's Burger (drive-thrus) are open til 2AM most of the time. Of Course, we have the two all-nite standbys WAFFLE HOUSE and DENNY'S. You may have to go a mile or two, but there is plenty of 'FF' selection for late-nighters here!

Hot Dogs; every part of the US has at least one really good regional company turning out good dogs that the FF joints could use as a supplier in each area.

Agree with the mushrooms

Fish and chips, the battered variety of fish

Different flavors and cuts of fries. Dipping sauces for fries. Gravy for fries

Deep fat fried fruit pies, dagnabbit! People were skinnier back in the days when they served up those dessert delights!

Onion rings made from onions, not onion flavored mush

Mushrooms arent hard to find on FF menus. Here In Dayton Arbys has breaded mushrooms, as well as fried cheese sticks and poppers on the sidekickers menu. Back in the early 80s we \also had Browns chicken in Denver. I remember we went in once right after a big rush. The manager told us it would be about 25 min on the chicken. If we were willing to wait he would give us a double order of fried mushrooms.
