Meatball Monday...

The total mix was 2.5 pounds...1.5 pounds went into these tasty meatballs, 1 pound into 2 superburger patties in the reefer box for later cookin'...

350* for 1 hour (I think my oven was a little bit under 350*) in a disposable foil 8"x8" pan...turned half way through...gravy is 1/2 brown gravy & 1/2 chicken gravy...

Last night,  shrimp sauted with a bit of Jack Daniels sauce and filet.  Homemade pecan pie for desert.  Tonight, lasagna and pecan pie for desert.  Ms OC makes a great pecan pie!!

I love Popeye's too Mar! BackRhodes I love the thought of Meatball Monday's rather than Meatless Mondays!!
Last night I made fried chicken, okra and tomatoes and my husband made his favorite potato salad! I love fried chicken and I think I have perfected it, at least for my family's taste!

I took a four-hour nap instead of cooking...this is what happens when I have to take a pain pill now. Luckily, I still had a slice of that bacon-spinach-smoked Gouda quiche left, and some cottage cheese.
 
Now I really want fried chicken, but I don't have any chicken and the weather is NOT conducive to so much as standing on my porch, much less leaving my house (the police think so, too, and are telling us to stay home).

I did some pistachio-crusted baked tilapia, peas with balsamic-butter sauce, and some beets out of a can. I'd forgotten how much I love that pistachio crust (it's ground pistachios, dry mustard, Parmesan, and parsley)!

I forgot to take pictures.  I just finished a plate of pot roast with the standard onions, carrots and potatoes.

I'm almost afraid to post this because I've seen the argument go on for years. But I was always taught that if you didn't have enough meat for whatever reason you could add beans to make up for it. Since I only had one pound of ground venison and no ground beef, I added some pintos. It's still good.

Thank you! It's really rare I get venison, but I think it makes the best chili.

I thought it was about medium heat...made my nose run and I got a little hot, but nothing that stayed for more than a few seconds after each bite. My mother, however, thought it was the devil and only ate about 1/2 cup before putting it away. More for me!

Felix - I have a friend that can get you all the venison you want after the other afternoon.  After picking up his NEW 2014 Chevy Equinox heading home from the dealer Bambi's father jumped right in front of his NEW car and (as Emril Says)  BAM.  The car was totalled and so was the deer, my friend has a concussion and NO NEW car.  Did I mention he had JUST picked it up from the dealer

CajunKing...I've actually eaten roadkill venison more than once! The trouble is, you have to hit them lucky or the meat is spoiled. Sorry about your friend's new car...that just sucks all the way around.
 
agnesrob...thank you! I usually prefer chili without beans, but sometimes it just doesn't work out.
 
Tonight I did King Ranch Chicken with Black Bean and Corn Salad. Both are recipes that can be found just about anywhere, but I morphed a bunch of things together, took out the stuff I didn't want, and came up with what I'm considering my own versions of both. And tonight my picky mother even cleaned her plate!

The traveling seafood at Costco is outstanding.
