Today is my daughter Katie's birthday. Here is her plate of Chinese take out which she picked for her birthday dinner. Boneless ribs, pork fried rice, sesame chicken, chicken mai fun and egg drop soup.  Carrot cake will be dessert!

Occasionally I was able to get opah (moonfish) when I was the chef at Black Cow Tap & Grill in MA.  I was on vacation in CA wine country, staying in Yountville, and went to Brix.  We looked at the menu, the server comes over and starts telling us the specials.  When he got to "grilled opah" I said, "You can stop now!"  It was delicious.

I understand the Greeks are big fans of it. Every time I go into a Greek restaurant, they are always yelling, "Opah! Opah!"!

Dear pnwchef,

I was disappointed to learn from your post that an American culinary graduate and alleged longtime chef would not know that the fish Hawaiians call mahi mahi, and that Latin Americans call dorado is actually a dolphinfish (Coryphaena hippurus). Harding High would be spinning in its grave, if it had a grave. For that matter, so too would Porky and Central.

 
Michael, Aloha, and as a proud not grad of Harding high school, I thank you. I have fished and prepared the Mahi Mahi many times on the Island of Oahu and prepared them at our Luau's. We had our Male 'ana, and our first Keiki in the Islands.  I have also fished and prepared the Dorado in Mexico. If memory serves me right there are 32 different verities of dolphin, none of these related to the beloved Flipper.........Mahalo kupunakane........take care my hoapili

Anticipating our next big snow storm, I'm bringing home pulled pork from Rocklands Barbeque in Arlington, VA. http://www.rocklands.com/locations/arlington-va/
Pretty good "Que", I doctor it up with some Scotts Barbeque Sauce   http://www.scottsbarbecuesauce.com/ and a little tabasco. Cold beer and maybe some oven fries....

We're having a bone-in sirloin steak that's about the size of Rhode Island, with a mushroom hash and maybe some asparagus on the side.  I suppose I should go outside and make sure I can get to the grills...

Normally, that's what I'd be making! however, I *completely* forgot to order anything from anywhere. At least I always keep this stuff in the pantry! This morning I added chicory to my coffee, too. Best I can do while buried under several feet of snow.

Made blackened catfish--a fairly wimpy version bc I can't take a lot of spice heat--but it was tasty nonetheless.  Had a nice glass of pinot noir with it.

To start off Mardi Gras right, I made a sazerac and got my andouille sausage from M&S Grocery in Metaire, LA out of the fridge.

 
 I started dinner by making the "Creole trinity".

 
I grilled the andouille sausage on a grill pan.

 
i made up red beans, rice and used the trinity as a base to make Okra Creole. 

 
The andouille turned out great and the okra was delish!

Now I want catfish. And I've just placed an order with Cajun Grocer for a bunch of stuff, because I haven't had good andouille in a million years.
 
Mar, the only way to drink it full strength is to FILL a glass with crushed ice (pack it in there), then pour in about two inches of dark rum, then the mix. Even then it's a bit much, and it certainly doesn't taste the same as when you're standing in Pat O'Brien's with a glass in your hand. I always make two quarts from a package instead of one...but the dark rum is key. There's something about the two flavours together that's perfect.
 
My meal turned  out quite different than I had planned. She nixed the beignets, I didn't have time to crush ice for the hurricanes (there was quite the large amount of rum in them...it was that kind of day), and I was out of sausage so I had to dice some regular smoked sausage. But...not too bad. And my bar celebrates right, so that was a whole lot of fun.

Wow, you guys are Cajun, Fat Tuesday got to all of you. Nice looking food Felix, L2B and Ed............I made some Salmon Patties with a Remoulade sauce to drive Lisa nuts.........We bought some frozen Wild Salmon, we had a Blackened Salmon Dinner with the nice center cuts. I make the Salmon patties with the tail part. It works great with a squeeze of lemon and a Remoulade sauce.

Michael, from this day forward they shall be called Salmon Cakes. I do the same thing, I let them set up in the refer. My wife wouldn't eat these for years, she hated them as a kid. I made her some, she said, I never thought they could taste like this...........Another one bites the dust.....

I even liked them when they were made from canned salmon. But I've had some really, really terrible ones in restaurants. If the ones I had in restaurants are anything like the ones your wife ate as a kid it is no wonder she hated them.

I made some Mandarin Orange Gremolata to go with it.

 
It will be tough surviving these next few weeks. I hope I don't starve.

Mar - I loved the pinto bean and corn bread deal you had a few days ago.  That really looked awesome.
 
Everyone's Fat Tuesday food all looked good, too.
