Tonight I did my version of Chicken Sorrento, which is a nice blend of winter comfort food casserole and diabetic-friendly.

Would you share your Chicken Sorrento recipe? That looks wonderful, and since it's diabetic-friendly, I would like to try it. Most recipes that I googled have too many carbs for me.

It hasn't been approved and made public on the site I use yet so I can't post a link, but this is it. It's a bit higher in carbs than I'm supposed to make for her, but I can get away with it every now and then, especially if I keep the meals on the surrounding days down.
 
Chicken Sorrento

6 cups water
1/4 teaspoon salt
1 1/2 cups whole wheat penne (uncooked) (I often use Dreamfield's pasta instead because I like the texture better)
6 tablespoons whole wheat flour
3/4 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons dried parsley
6 boneless, skinless chicken breast halves
1/4 cup vegetable shortening
4 ounces mushrooms (canned, drained)
1 can (10.75 ounces) condensed cream of celery soup
1 teaspoon dried oregano
1/2 teaspoon garlic powder
16 ounces low-fat sour cream
1 1/2 cups frozen peas, thawed
1 teaspoon paprika
 
Step 1
Preheat oven to 350F; spray a 9x13 glass baking dish with nonstick cooking spray.
Step 2
Bring water with 1/4 teaspoon salt to a boil over high heat; add pasta, reduce heat to medium-high, and cook, stirring occasionally, 12 minutes or until tender.
Step 3
Combine flour, 3/4 teaspoon salt, pepper and parsley in a large zip-top plastic bag; add chicken and shake well to coat.
Step 4
Melt shortening in a large skillet over medium-high heat; add chicken pieces and brown 8 minutes per side.
Step 5
Drain pasta and set aside (I usually thaw the peas in a colander, then just dump the pasta over top to drain).
Step 6
Remove chicken from skillet to a plate; cover and keep warm.
Step 7
Add mushrooms, soup, oregano and garlic powder to skillet, scraping up the browned bits to combine; cook, stirring frequently, 5 minutes.
Step 8
Remove from heat and add sour cream, stirring to completely combine.
Step 9
Combine peas, pasta, and half of sour cream mixture and spread in bottom of prepared baking dish.
Step 10
Lay chicken pieces over pasta; spread remaining sauce over chicken pieces.
Step 11
Cover with foil and bake at 350F for 40 minutes; remove foil, sprinkle with paprika and bake an additional 20 minutes.

Tonight I just went easy. I stopped at one of my favorite markets, Antojitos Mexican Market. I got a carne asada burrito for dinner. I combined it with some Frijoles Negros I had and topped the beans with Queso Cotilja and fresh scallions from the market. Dessert was a fresh honey tangerine from the market. 

 

 

 
Yes, that is a nice glass of Cazadores Tequila to go with the dinner.
 
I also bought fresh chili peppers, bell peppers and chili powders for tomorrow night's dinner----Bison Chili. Stay tuned!
    FYI---the carne asada burrito was $2.99!!!!!

Not since a few weeks ago. I did a private pre-event tasting for an event I'm participating in. I sampled Herradura, three types. One was aged in a sherry cask and one aged in an oak barrel. They were amazing!

Not since a few weeks ago. I did a private pre-event tasting for an event I'm participating in. I sampled Herradura, three types. One was aged in a sherry cask and one aged in an oak barrel. They were amazing!

Herradura is one of my favorites as well.   An event involving tequila sounds fun (and dangerous)!

It's a tasting dinner. A different tequila matched with each course. I just did the same with MacCallan Scotch a few weeks ago. Fun-----and good stuff!

Well, tonight was chili night. Last night I bought my ingredients from Antojitos Latino Market. 

 
I also bought a package of New Mexico Chile Powder and a package of Chie de Arbol Powder, plus a container of fresh grated Queso Cotilja cheese. Everything went into the pot to make a nice "pot of red".
 

 
An hour and a half of simmering and it was ready. I had it with a side of frijoles negros and some homemade spinach and cheese tamales (not made by me, but made by a friend's mother).

 
The chili, topped with fresh grated Queso Cotilja cheese, was delicious.

Tonight's Fast Food was the Roasted Vegetable Salad from California Pizza Kitchen.  I like to think it's healthy.
 
My car has been parked in the garage since bringing it home.  Been cleaning out Mom's condo which is a mentally challenging task.  Very difficult.  VERY.
