Husband has been out of town, so I'm doing one of his favorites for a welcome home: Stuffed peppers (huge bananna peppers from his garden stuffed with sausage, rice and tomato sauce topped with parmesan cheese), baked sweet potatoes, field peas and cornbread.

I really like this thread - lots of ideas for sprucing up the otherwise boring day after day dinners we have to prepare. 
 
Tonight we were fortunate that a friend that works in south MS brought us 15 lbs. of fresh Gulf Shrimp which we had to dehead and clean to put in the freezer - the kitchen looked like a processing plant - but we got it done and put some beef kabobs on the grill along with baked potatoes.  Poached some of the shrimp in Vodka, lemon slices, cracked black pepper and a little salt. 
 
A glass of Merlot and it was all good.

What I did differently: whole berry cranberry sauce instead of fresh cranberries, chicken with skin, double the vegetables (baby carrots instead of whole carrots), and dried thyme instead of fresh thyme sprigs.

It was FABULOUS! Add in that it's very diabetic-friendly at just 16g carbohydrates per serving, and it's a definite winner.

Felix, the thigh is my favorite part of the chicken...I'm glad to see that the recipe calls for them instead of boneless/skinless/tasteless/lifeless breasts.
 
I had the leftovers from Wednesday's sesame-soy pork steak.

I did dinner for lunch today, as I've discovered good sushi right downtown! Gorged myself on a bowl of miso soup and three rolls (Vegas-crab, cream cheese and avocado; yellow tail; and I forget what they called the last one, but it was spicy tuna with more spicy tuna and the spicy red sauce without mayo). I cannot even tell you how excited I am to know I can get good sushi in Michigan without having to promise my firstborn in payment. Only came to $23.00.

I work in such a wonderful deli now that I dont need to cook! Tonight I brought home crab cakes I make( real lump crab, not krab)with a remoulade sauce, homemade mac and cheese, and lots of vitamin c as we are sick.However, fishtaco's meal appeals to me.I love everything ham, beans and cornbread!!!

White bean soup (recipe from Lousianna Cooking magazine) with slaw and cornbread. This way dinner doesn't interfere with Alabama/LSU.

I put a 2-1/2 lb. chuck roast in the smoker at 9:30 this morning so we can have shredded beef for dinner and a few weekday lunches.

Shrimp and crab au gratin with sides of steamed broccoli and green bean casserole. I'd post a link to the recipe, but I just tonight submitted it to the site and it takes 3-5 days for approval.

Hot chicken on a cold night...
 
Chicken thighs, grilled..dry rub and at the last minute Kinders bbq sauce...
 
Yummy...it's 41* and dropping, so I'm bundled up, ducking back inside to warm up, pop back out to check on the chicky, then back in...my taste buds think it's worth the effort...
 
I really don't like cold weather, but sooner or later the snow WILL "stick" and outdoor cooking season will mostly be over, but at least this year I'm not dependant on getting an oak wood fire going, and there's a possibility this New Years Day I can fire up the grill weather permitting...(in 4 weeks we'll be running our Santa Train, then shut down until Spring...and right now I wish it was Springtime already)...

Real SOS (chipped beef), fried potatoes and a couple eggs sunny side on top it all!

 
We had a modified version of SOS in our house - both my parents were WW2 Vets- my mom's version had ground beef instead of chipped beef - she called it "crumpled beef" which was broken up medium fine (like taco meat), and she used Loma Linda gravy mix -  I still make it every now and then (once or twice a year)

Got cut for dinner, so no catering. So I took myself across the street to the bar for a monster bleu cheese and bacon-stuffed burger with onion rings. It's an ungodly amount of food, but it was 5pm and my next break won't be earlier than 3am.

My sumptuous repast was a SmartOnes Chicken, Broccoli and Rice with extra brown rice added for that certain something special. I threw on a bag of Target microwave popcorn just to make the whole meal a special occasion. Then I ate half an Albemarle Pippen apple just so I'd have a local food to tell you about.

Grilled burger just before sundown...
 
I have to fast now until my MD draws blood tomorrow, so I don'r dare watch any food tv programs tonight...and as soon as I'm outta the DR office I'm scarfing down some tacos carne asada...
 
How much longer can I grill outside...???  Snow is in the forecast in a couple of days...unknown much much and what the snow level will be...I keep resisting putting the tarp over the grill, hoping I can keep grilling just 1 more day...
 
Right now I'm craving roasted in the husk corn on the cob...wrong time of year, unless I get desperate enough to buy some of those pathetic ears wrapped in plastic at safeway...ugh...I wisjh it was springtime already...

Cold front was on the way so a big pan of lasagne baking in the oven sounded good for tonight.
 
Now the cold front's not making it here until tomorrow night so we had the A/C blasting away while the oven had the bubbling pan of lasagne and garlic bread baking.
 
A small salad and glass of red with it - it was all good.

I see no reason whatsoever not to grill year 'round. Just shovel a path to your grill (or move it to somewhere you already shovel), toss the tarp over it when not in use, and go on with your life. There is something about eating a grilled steak in mid-January that makes it taste a thousand times better than it normally would.

Last night it was chili topped with shredded cheddar cheese, diced onions, sour cream, and crushed fritos. Cornbread on the side with butter and honey. Perfect for a chilly November evening!

Yesterday I made a big pot of lentil soup.  Something was missing from it and I couldn't figure out what "taste" it needed.
 
I ate a very hot baked potato with butter later in the night.  Much better than dessert!

Lunch was at Cafe Sarafornia in Calistoga: Chicken Fried Steak, 3 scrambled, hashbrowns, wheat toast, and a vanilla milkshake...
 
Dinner at El Casano Del Cielo in Laytonville...3 taco carne asada plate...and the waitress was tall, cute, very long legs, and a great smile...I wish I was a few decades younger (!!!)...
 
Dessert was a double cone: Chocolate Chip and Chocolate Chip Mint...

Thanks for the lentil addition suggestions.  I tried hot sauce and that didn't do it.  So far it's vegetarian but I bet some bacon or smoked sausage would do it justice.
 
Tonight I picked up a burger at Fat Burger.  I thought it was a local chain until I looked it up when I got home.
 
I don't think Kuwait, Dubai and Indonesia are local.

Chili dinner down at the VFW tonight. Yea it's that Indiana version of chili with the spagetthi in it, but it's for the VFW. That and they have some great homemade pies.

All my kids and grand kids arrived tonight for Thanksgiving Week. Tomorrow, (Sunday) is a picnic - Hamburgers, Hot Dogs, Brats with all the trimmings, Grammy's World Famous Potato Salad, Deviled Eggs, Relish Trays, Guacamole & Chips and other assorted stuff. Pumpkin Roll for dessert. Grammy and I will be doing all the family favorites during the week culminating with the Deep Fried Turkey Thanksgiving Feast. Friday is the Hummer Tour of the Red Rock Wilderness up by Sedona with a stop at the Rock Springs Cafe on the way up for Breakfast and to get some pies to bring home!

I'm experimenting...is it better to split my "super burger" into two 1/4lb (traditional sized) burgers and have 1 for lunch and 1 for dinner...I'm thinking it's better to spread the portion out over 2 meals (doctors say we should eat less but more often, instead of humongous portions)...
 
It snowed yesterday and last night, so I cooked indoors...

Fried up an onion with some ha Spanish Chorizo. Then I scrambled a few eggs and mixed everything in to some fried rice.
 
Filling.
 
I don't like the Chorizo.  Too salty with a strange taste.

Tonight I had one of my "concoctions".  Cubed ham cooked with frozen Brussels sprouts until tender; then tomato sauce and Minute rice added.  This was eaten with a micro-baked sweet potato.  When I was out today, one store had sweet potatoes at 18 cents a pound.  I couldn't resist that low a price, so I grabbed four roughly 1/2 pounders.  I prefer them micro-baked whole with butter or sliced fairly thin and fried (no sugar or syrup; they are sweet enough as is.)

Decided to go Mediterranean. I got the "Tour of Lebanon" platter, which is two grape leaves, two falafels, three pies (cheese, spinach, meat), one kibbe, pita bread and hummous, and babaghanooj with a piece of baklava for dessert.

Left over from yesterday smoked sausage and beans cooked all day in the microwave. Recipe came from Louisianna Cookong magazine. Wonderful!
