Dumb dinner tonight, but satisfying-sloppy joes, potato chips and kosher dill pickles-of course while watching football. Lots of sodium, I know, thats what water pills are for.....lol!

Tonight I threw together a breakfast casserole I kinda wanted to name "crack casserole" because I couldn't stop eating it, but settled instead for "Potato and Smoked Sausage Casserole". Grated potatoes, smoked sausage, mushrooms, green pepper, onion, Pepper Jack, cheddar, and eggs. I'm eagerly anticipating wanting a midnight snack!

When we make pasta we always make more then can be eaten in one meal!
Pasta ALWAYS tastes better the next day!  (Especially Ziti and Spaghetti)

On Saturday I impulse-bought a couple of bison strip steaks and will be grilling them tonight.  I never eaten let alone cooked bison before and am looking forward to it.  At first I thought there was 1 steak in the package but it turned out to be 2, and I was somewhat surprised at how small they are.

Tonight I'm stepping outside the box and facing a food I swore I'd never eat. I'm making tofu tacos. I'm not going vegan or even vegetarian, just trying something new. I already like the fact a brick of it is only around 2 bucks.
 
I'm going to mash up some firm tofu and saute it with onion and spices in olive oil, and put it in a flour tortilla with black beans (can of black beans, can of Ro-Tel, chili powder), shredded cabbage, a little sour cream, salsa verde, and pickled red onion (making it myself). I'm hoping it turns out good, have to wait and see.

Let us know.  For me it's a consistency thing.  I'd have to add crunchies like pickled onions for some bite.
 
I haven't seen Orange Roughy in years.  Used to love it.

I have to disagree.  Reheating pasta does not make it better the next day.  It makes it overcooked.

Aaarrrggghhhh! It's not the NCAA championship. The NCAA doesn't have a championship for Football Bowl Subdivision schools. Seems they don't want the student athletes at that level to miss class.

I was pretty sure what I was going to be watching was the BCS National Championship, but whatever.
 
Dinner was reheated leftover tortilla casserole, and if anything it was even better the second time around.

My dinner wasn't photogenic but it was quite satisfying.
 
Out of the can.... Sardines in Louisiana Hot Sauce rolled up in to two warmed flour tortillas.
 
Now I have to tell myself that I'm full and don't need anything else.

We were pretty happy with how they turned out; they had a nice, beefy flavor and I did my best to not overcook them...but I came close!

It turned out rather well, something I'll definitely make again, and since I have some vegan friends it's a meal we can enjoy together. I had it again for leftovers last night.
The cabbage and pickled onion satisfied the crunch requirement nicely. I let the diced tofu sit in a container with chili powder, garlic powder, chopped onions, s&p, and some of the juice from the black bean mixture for half an hour or so while I made the pickled onions, and it soaked the flavor up quite well. Fried it good and hot until the onions softened, and that was it. It could have benefited from a little cilantro though. It was a cheap and filling meal.

Threw together a pie/quiche sort of thing with ricotta, mozzarella, Parmesan, cheddar, spinach and eggs. Served with some mixed tropical fruit. It was darn tasty.

I often wonder how those who don't eat meat for "humane" reasons reconcile the fact that their vegetables get trucked to market over the bodies of bugs and wild critters that are crushed on roadways; roadways which are built over the habitats of animals, birds and insects, thus killing those critters. And then there's the fuel used by those vehicles that comes from sources resulting in the deaths of animals, fish, birds and insects. And of course the vehicles themselves, and their tires, come from manufacturing plants that were built on land where once there were live creatures that now are dead from loss of habitat.
 
As I said, I wonder.

Thanks, Ann! I was really pleased with how it came out.
 
Tonight was my last day of cooking for a bit, since we now have more than enough leftovers (although I will have to make lasagna soon, since I still have ricotta). Artichoke and ricotta stuffed chicken breast, and sliced potatoes layered with ranch dressing, grated cheddar, and grated Parmesan. The filling for the chicken needs something, but I'm not sure what it is. I'll have to work on it.

Tonight we're having MH's famous meatloaf which is much better than mine.  He has a certain je ne sais quoi with meatloaf.....maybe it's the peppered bacon on top......I really don't want to find out because then I'll have to make it.  I am in charge of the smashed potatoes, gravy, fresh (!!) peas and probably the clean-up.

Tonight is leftover tilapia (mayonnaise, Cajun seasoning, dill and Parmesan sauce), leftover lima beans, leftover tropical mixed fruit, and leftover potatoes with ranch and cheddar. It's also the night I clean out the refrigerator since the trash goes out.

I accidentally defrosted pork (read: I set it on top of the refrigerator while I was rearranging the freezer and found it two hours later), so I made a casserole. Stuffing mix, diced pork, mushrooms, broccoli, black-eyed peas and cheddar cheese soup.

LOL! If I'd had bacon defrosted, it would've ended up in there. Everything is better with bacon! They were boneless loin chops, the ones with the little strip of fat down one side. I did use a whole stick of butter with the stuffing mix, though, so I had plenty enough fat.

We got home last night from Pittsburgh so dinner was quick.  I made chicken, broccoli and fusilli.  Tonight is beef short ribs braised in red wine with onions and garlic.  Accompanied by potatoes.....MH wants mashed, I want fried.......and asparagus.

Last night was Vietnamese fusion for a friend's birthday.  We had a chicken coconut curry soup, braised winter vegetables, Empress rice (sorry, no pic) and passion fruit pavlova.  My apologies for the yellow cast on the pics --> lighting in the restaurant.

Stand up taco's last night: Carne Asada Mexican style  (beef, cilantro, red onion) with the addition of some cheese, + green LV taco sauce, and my bbq sauce blend...lately I've been frying my tortillas like I used to do in the 1970's...I'm just craving more flavor than the dry toasted tortilla in a black iron skillit brings...
 
I call these "stand up" because I walk outside with 1 taco and a paper plate and look at the stars, go back in for another...
 
I start out with my bbq sauce blend on them, and end up with green taco sauce...lots of sauce / salsa variations with 7 taco...

Even though I wasn't able to build a roof over my grill this past fall, I've still been able to get quite a lot of grill time in this winter, now that the great deluge of December is over (with over 50" of rain, not much snow)...
