lleechef made baked sauerkraut (with bacon, onions and beer) and Carle's of Bucyrus bratwurst for dinner this evening. With it we had some of the last of the Beefsteak rye bread. The beverage was ale. Eating till almost bursting is not a good thing. But it was worth it.

After my huge breakfast, I couldn't eat before I went to work. Then of course by the time I got out of work I was starving, so we ended up at Steak & Shake on the way home. It happens.

TJ--you are right!  Khao Soi was the name of the soup.  Photo doesn't do it justice--it was creamier and not so yellowy and so delicious. :)
CC--the Pavolva was such a nice, light dessert, and passion fruit is fabulous.

3 1-lb. pieces of flank steak are in the fridge right now.  The garlic-mustard and bloody mary pieces are tonight and the 3rd will be tacos tomorrow night.

Next time I break down a 3-lb steak for the freezer I'll pack the pieces individually instead of all together.  What was I thinking...

I've done the same thing, Brad, but I try to put more thought into how I freeze things. Sometimes lack of time or lack of inspiration prevails and I end up doing like you. Sometimes it works out really well!

Yesterday I went to Fairway Market and saw they had prime grade rib steaks on sale. I bought one each for my husband, myself and oldest daughter. My other two prefer filet mignon. I also had some baby lamb chops which I had put in a zip lock with rosemary, thyme, garlic, salt, pepper and olive oil. Since it was going to be a balmy 45 degrees with a cold forecast the rest of the week I decided to do some grilling. I threw a handful of apple wood chips on the coals right before I threw the meat on.l We also had sautéed onions and mushrooms and salad. So good!

When the temperature is in single digits and the wind chill is well below zero, as well as there being lake effect snowfall like crazy, I turn to casseroles. Fake crab, peas, green pepper, white sauce, crushed Club crackers...and cheese. Lots of cheese.

I love that the creamy chicken enchiladas recipe makes a double batch. Took the second pan out of the freezer last night and they're in the oven now. I've got salsa, sour cream, sliced black olives, and jalapenos to top them, along with plenty of Cajun Power spicy garlic pepper sauce.

Working hockey games truly screws with eating dinner since I have to leave the house at 3:30 and don't get back until 10:30 or 11:00. And tonight Steak & Shake was closed! They never close! So we got Taco Bell. Had I known about Steak & Shake we'd have gone to the Adobe (local place, Roadfood-worthy), but they're downtown and we were already almost home.

Does Flickr offer different links for different formats (email, message boards, etc.)?  I use Photobucket and images I post to message boards and forums are usually links that contain the filename (.JPG) that can be processed by the forum software.  The chop looks very good...what did you fill it with?

I received an ugly surprise when I went to make dinner last night.  I had stopped at the store and picked up a couple of pork rib chops because the package label loudly proclaimed that they were stuffed with Brownberry stuffing, but when I got home and read the official meat label I saw "celery and onion".  Oh sure, the chops did have the Brownberry stuffing but someone had added chopped raw celery and onion to the mix...blecch!  I went ahead and grilled them anyway but I spent more time picking out the icky bits than I did eating!

Flickr doesn't appear to be user-friendly for posting on message boards, although maybe it is if they're your photos. I finally found the code you need to post, buried about four levels down. Click on the "Share" menu, then choose the "Grab the HTML/BBCode" option at the bottom. From there, mark the circle for "BBCode". Buried in what shows up (and you can't just highlight what you want, you have to copy the entire block of code and then delete what you don't need) is the {img}URL ending in .jpeg{/img} code you need to post a picture. I used {} instead of [] so it would show up.

For your chop picture, you want {img}http://farm9.staticflickr...2536906_cd180e11af.jpg{/img}, but with [] in place of the {}, so you get this:

And yeah, that chop looks pretty darn amazing!

I just got done eating a package of "Scampi" noodles and some toasted coconut vanilla yogurt. I really wish I'd had yours!

A while back my buddy from Iran gave me some of a meat and potato dish his wife made for him for lunch, I'm going to attempt to recreate it, with some additions. Potatoes sliced thin, layered with meat (I'm using ground beef, but chicken is good), onions, green peppers, stewed tomatoes, and spices. The main spice is zardchoobeh, it took us a little bit to figure out that over here we call it turmeric. My twist I'm trying is to add paprika, thin sliced yellow squash and zucchini, and maybe a little cheese, not sure what kind yet. I guess it's kind of like a lasagna with potatoes instead of pasta, and less tomato sauce.

The Tri Tip I cooked last night was one of my top 10 best...

My "secret rub" included applewood smoked salt...

On the grill fat side up, with indirect heat for 75 minutes...

Last 5 minutes I dumped some Lawry's teriyaki on it...it's a rather thin sauce which is good...most of it ran off the roast, leaving a nice nuance of flavor (I didn't want it to overpower the flavor of the roast)...

I had a container set aside for leftovers, but, in the end there were NO leftovers to preserve...

Right now I'm making Steve Raichlen's recipe for Chinatown ribs. Ribs were on sale in every store around here I guess because of the Super Bowl. I usually use only St. Louis Style pork ribs but this time I've included some beef ribs. Hopefully I'll remember to take pictures before they're all gone!

Re:What's For DINNER ...??? 2013/02/03 08:49:23
My Chinatown ribs came out great! I made them once before using only pork ribs and did them outside using my Weber charcoal grill. Yesterday I used both beef and pork ribs and decided that I really didn't want to keep going in and out. The temperature was in the 20's with a breeze. I'll grill in almost any kind of weather but when I'm doing something that requires low and slow I prefer it to be at least in the 30's!
They came out so good that when making this particular recipe I might always make them inside and definitely will use beef ribs. Here is a picture of the beef ribs. The pork rib pictures came out a little blurry.

I recommend making 1 1/2 or twice the sauce/marinade recipe to insure you have enough extra to put on before serving.
I cooked them loosely covered with foil for 2 hours at 250 then turned the oven up to 350 basted with some of the reserved sauce and cooked them another 30 minutes. We don't like our ribs to be "falling off the bone" tender. These came out perfect.
Marlene, I also cut the sugar down to 1/4 cup instead of half. It was plenty.

Beef ribs are SO easy to make it's a snap!
You go to the store such as Sprouts and buy "boneless" beef ribs, take em home and boil the hell out of the meat for awhile then put them on the BBQ/Grille and cook!  Marinate as desired!  The meat is SOoooooooooooo  tender it will melt in your mouth!

Which works if you live somewhere there are stores such as Sprouts. No such luck here without driving at least three hours.

I've always found that boiling meat leaches all the flavour out if it, like when you make stock. When I do that, the meat typically ends up in the trash. Do you have a recipe, or a suggested method? I am now intrigued. Whenever I do beef ribs I braise them, then put them in the crock pot with my sauce all day long.

Those ribs do look good but I dont care for Ribs with the bones.........main reason......way too little meat on them and are mostly bones from my experience!  When you buy the ribs you buy them by the pound and bone weighs a lot so you are mainly paying for bone and not meat!  Yet another reason to buy boneless!

Re:What's For DINNER ...??? 2013/02/03 17:36:23
Price is adjusted for the bones, Greg.  Boneless cost more per pound.

It's not the cooking part that is difficult.  It's the buying and not knowing how fatty the beef ribs are until you take a bite out of them.

I also don't care for boiling prior to grilling.  I have a friend who microwaves some foods before putting them on the grill.  She says that way the inside is sure to be cooked.

I've been to barbecue places that boil chicken and then heat them up with sauce.  I only go to a place like that once.

I agree Felix! I don't boil my ribs or my brats! I only "boil" brats if I am simmering them in sauerkraut. Usually I cook them on my Weber with indirect heat. I usually do ribs the same way. Boiling leaches out the flavor fat is trying to leave in!
My brother cooks his ribs and wings in his crockpot. I think they turn out mushy. I usually use the grill but have had great results in my oven!

That looks delicious! I love Indian food!

I was craving ice cream the other day but the weather was bad. I had a package of Kulfi mix that I picked-up at the Indian cash & carry. I had low expectations...but had to give it a try. I had lower expectations when I tasted it (saffron - almond - pistachio) before it went in the freezer! It was delicious! I will try to make it from scratch...now that I enjoyed it.

I'd love to see the blog...if you'd like to share it!
