I tried a new recipe (and actually followed it without making changes...weird). Cheddar bacon asparagus strata. It needs more cheese, definitely. And something else. I'm going to hold off tweaking seasonings until I make it again with more cheese and with asparagus when it's in season here instead of shipped from California. It wasn't at all bad, just needs some tweaking.

We had enchilada's tonight-Bobs aunt gave us a batch of homemade refried beans, which was the filling along with queso-sauce on top and green chilis. Pretty good.

Last night dinner was old fashioned, red sauce Italian, and as much as I hate to admit it, lleechef's meatballs -- beef, pork and veal -- were the absolute finest I've ever eaten in a long life of eating meatballs made by wonderful Italian cooks. They were light and they were delicious, and they were amazingly tender. They were so good that tonight's dinner will be baked ziti and the rest of the meatballs.

Tonight was a home run , according to my Philly born husband! Texas roots came out - buttermilk fried chicken, cornbread stuffing and gravy, and buttered broccoli. He's leaving tomorrow on govt business - he's vowed to take the leftovers with him!

Two weeks in a row I've managed to serve ALL of the leftovers for dinner so none of them have to go out in the trash! We had the last two pieces of shrimp-avocado-feta quiche, a dab of green beans, a dab of peas, a dab of French-style green beans, a dab of cottage cheese, and some deli redskin potato salad. Tomorrow I cook.
 
Cheddar Bacon Asparagus Strata is the recipe I used, if you want to try tweaking it yourselves. I probably won't get to it again until spring when asparagus is in season here and the farmer's market is open. I'm going to see if I can't make it with some of the garlic-herb bread from the Amish bakery...they stud the entire loaf with whole cloves of garlic and I think it would be an excellent choice.

Ate a big brunch at my brother's house today to celebrate my niece's 18th birthday and her 4.0 GPA.

Tonight was homemade chicken noodle soup, potato salad and chocolate mousse cake at my Mom and Dads. She made my son pancakes becuse he didnt want what she cooked. When I was a kid we ate what she cooked or didnt eat, I guess she's softer now.

Wegmans had pork chops on sale for $2.29 a pound, so I got a family pack of 8 decent sized boneless chops for 7 bucks. 2 of them is a perfect portion for me.
Tonight I'm going to pan roast a couple of the chops, and have them with mashed potatoes and maybe asparagus or zucchini. Trying to decide if I want a sauce for the pork chops or just have them relatively plain (onion, garlic, soy sauce).

Last night I made BBQ sauce, and this morning got up stupid early to put ribs in the crock pot. Served with cornmeal muffins and steamed broccoli. The meat didn't so much fall off the bone as the bones fell out of the meat and ended up on the bottom of my crock pot. Exactly how I love them!

Tonight was Ham & beans with Corn Bread
 
Started the pintos and northerns last night in the crock pot added the ham late last night let it slow cook allllllll day and made the corn bread tonight. 
Of of a huge crock pot full there is maybe 2 serrvings left and no corn bread left.
 
(Michael you could always go for that can of Spaghetti in your cupboard)

Tonight I made a stir-fry based on several fresh vegetables that were about to die a horrible death and a random can of bamboo shoots in my cupboard. Couldn't duplicate it again if I tried, but it was really tasty!

Is there a Painturo's in Lebanon, or did you go to the one in Mt. Juliet?  They have one of the best pizzas in the area.  If you look on the wall near the cash register, you'll see a note that I wrote them, raving about their spaghetti lunch.

I'm making my $5 spaghetti dinner tonight. $2 jar of decent Wegmans store brand "Grandma's Pomodoro" sauce, 89¢ can of crushed tomatoes, 89¢ box of thin spaghetti, 79¢ loaf of bread, 49¢ can of green beans. Saute a small onion in some olive oil, then add the tomato products with extra garlic and basil from the spice rack. Butter and granulated garlic for some quick garlic bread. Et voila. A pretty good meal that will either serve 4, or just me for a couple days.

"Sausage style" pork chops tonight.  I found a package of boneless sirloin chops in the freezer a couple of days ago and last night I seasoned them with a paste made of olive oil, garlic, and crushed fennel seeds per a recipe I found in a "quick weeknight meals" cookbook that I think might be from Good Housekeeping.

Tonight. following the triumphant return from Mobile (because we made it back alive is why it was triumphant)) dinner will be sausage, pepper and onion subs. I suggested just going out and getting some ribs and pulled pork from City Barbeque, but after the Brick Pit Saturday evening lleechef swears she'll never again have ribs from City barbeque. I can't blame her.

Mmmm.. biscuits! Saturday night was braised lamb shanks and last night was pastitsio made with some of the leftover gravy and lamb shank meat. So delicious!

Well, she didn't want another restaurant meal. And it was scrumdillyisious! Tonight it's broiled cod and broccoli rabe sauteed in olive oil with garlic and red pepper flakes.

Starch night because there aren't any fresh vegetables in the refrigerator and nothing green in a can except for olives.
 
We were given a big Omaha Steaks box for Christmas and it was time to try out a couple of the boneless ribeyes.
 
To totally embarrass the steaks we marinated them in Girard's Champagne salad dressing and then "grilled" them on the George Forman.  (It's raining!)
 
The second starch is/are Field Peas purchased in Texas.
We purchased a lot of cans and bags of food related things we don't get here.

Mar - Omaha Steak products are good!  I used to get their mojito pork tenderloins, but I don't think they offer them anymore. 
 
It's fun to buy those regional things like field peas when you're traveling!
 
I made a brisket hash last night--sounds better than it was, though.  Have to work on it.

It really was, though. I could've easily used half of what I did. But what I was going to originally make required roux, so I used a whole stick to saute the onion and celery.

Michael, I was 100 miles away, I wasn't involved in no murder. A person called "we will call this guy the Butcher" he took the cow down, he takes care of all my family business. He called me and just said, the cow Moo no More, I said the cow moo no more, this was my only involvement. The other Steer was done with a Professional hitman, he was taken down in a multiple hit. I don't think we need to bring this up again, let it lay, know when to let the Butcher do his work.............

Bill, I grew up in a slaughterhouse. Well, sort of. My father owned a slaughterhouse in Torrington, and was in the meat buusiness for years. You should have seen me breaking down carcasses at age 10, and hauling sides of beef from a truck into customers' stores and restaurants at age 14.

How about a meatloaf packed full of onions, peppers, spices and topped with tomato sauce, peaches and cream corn out of the garden, green beans with smoked porked jowel from Cumberland Gap along with some cocktails??
 
Pretty good and Roz took a break from her studies to enjoy the goodies.  I watched the NASCAR race.
