It's been a beautiful day so we went for a ride and stopped to have ice cream! Nice plain vanilla cup with chocolate. Now I have a giant gut ache.....     no dinner for us.

You're almost there.  It's braised Belgian endive (called chicon in the North of France.)   Then wrapped in ham and topped with a Mornay sauce with extra cheese on top for good measure.  MH has NEVER eaten Belgian endive.  I hope he likes it.  If not......more for me!!!!

We're having a couple of Stouffer's frozen French bread pizzas as opposed to the stir-fry I was planning, because I can't stand up long enough to make it. Turns out my back is displeased with my return to full-time work.

I had rather good mall sushi for dinner.  I hadn't been to the Culver City mall in quite some time.  The food court was completely revamped.  No more mall food...  Pho, Hawaiian food, Halal burgers, and many other upscale places to eat.
 
No tacos tonight.

I made beef vegetable soup for my husband who was not feeling well. I threw it together before I went to work in my Lodge Dutch oven and had my daughter turn it off at the appropriate time. Dinner for tonight and lunch for tomorrow!

Boiled peanuts!  That's just not fair!

We spent the afternoon assembling an IKEA book shelf for a friend so on the way home (she lives across the highway) we stopped for dine in eating at California Pizza Kitchen.  I like their salads.
 
We cross cultured with a barbecued chicken salad and a Hawaiian pizza.

I want one! Instead, I had a bowl of Reese's peanut butter puffs cereal and some yogurt. The number of drugs I have to take to be able to stand makes me too stupid to cook, as it turns out. Thus we had a fabulous stir-fry last night with no rice.

I have never ordered a Carne Asada burrito that came with Hamburger meat!    Wasnt even aware anyone would even serve em that way!
The only Mexican food with hamburger meat I have eaten are Picadillo (sp?) beef Enchiladas.

I love breakfast for dinner-cereal is good, as are eggs, etc. When my Dad was getting his Doctorate, and money was tight in the summer( he didn't get paid then) Mom made waffles, bacon and eggs on occasion, for dinner; we, as kids, thought it was fun-I still do

Ann, I always thought breakfast for dinner as a kid was something special and my kids have always felt the same way! I guess it isn't until we become adults we realize, oh yeah, easy and cheap!! I still love it!

It is completely coincidental that I made this on Cinco de Mayo...my Mexican friends and relatives are horrified that I make it at all, since it's got absolutely nothing to do with Mexican cuisine. Layered Tortilla Casserole, with cheater guacamole (1 avocado, 1 tablespoon lime juice, 1 tablespoon salsa, dash of salt and pepper).
 
 
 
There are no plated pictures...it looks like hell on a plate. But it's really tasty!

I circled Tito's parking lot 3 times which was a feat in itself.  Then I gave up.  That took at least twenty minutes.  Swearing was involved.
 
I had the chicken dinner from Versailles.  Half a chicken, white rice and black beans with onions and plantains in a wonderful garlic lemon mojo sauce.
 
Two chicken dinners fed four.

I made Ree Drummond's recipe for spicy garlic shrimp and tossed it with fettuccine. Delicious and easy! Served it with warm semolina bread.

The only changes to her recipe is to use cleaned and deshelled, tail on shrimp and I use 1 1/2 sticks of butter as opposed to 2 sticks.

I leave the tail on and usually buy peeled and deveined frozen shrimp to use. It is so easy to make and a crowd pleaser too. The shrimp don't even have to be fully defrosted.
