Dinner tonight, Taco Pie. One of my family's favorites. It's crust is crescent dough, which is prebaked. Prepared taco meat of your choice is then spread on top and then topped with shredded cheese. Bake again until cheese is melted. Serve with traditional taco toppings of your choice!
Here it is before the toppings are added:

I was in a foul mood directly attributed to my mother, so I had a microwaved "baked" potato with cheddar, sour cream, and fresh chives, along with some angel hair pasta with butter and herbs, and some bread. The one who cannot eat carbs ate a can of soup, which she actually made herself. I took no pictures.

Despite the heat and humidity I grilled some chicken thighs last night.  I added some fresh basil and dried oregano to some Hellman's mayo and liberally coated the chicken before grilling it indirect over charcoal and apple - kind of like doing an Alabama white sauce in reverse.  I also nuked a couple of russet potatoes and then put them in the drip pan so the mayo and chicken fat would baste them.  Didn't add a whole lot of flavor, though.

Yeah, it was pretty special soup. Campbell's Oyster Stew, even!

Tonight we had salads. I spent three hours in the kitchen last night making things so I would no longer have to cook until the temperature goes below 90 degrees for more than a couple of hours at a time. Crab-stuffed cucumbers, pea salad, shrimp salad, kidney bean salad, olive salad, and creamy grape salad.

This is the fourth time I've made the grape salad this summer. I could easily eat it for every meal forever. In case I didn't give it to you before... http://www.recipezazz.com/recipe/creamy-grape-salad-5778

Dinner tonight was almost the same as last night. Omit the shrimp salad and crab-stuffed cucumber, add some bag salad (with cucumber ranch dressing), and it's the same meal. With an astronomical quantity of sweet tea.

Usually, yeah. We only buy the lite sour cream and cream cheese, and I've switched over to almost all Splenda since mom can't have carbs. But I have made it with full-fat cream cheese, sour cream, and sugar. The flavour is a little fuller that way, but it's really good the way it's written, too. And you're welcome.

Black and Red Hoppin Juans with Chorizo and Andouille and Pico De Gallo.

Nothing like cajun/latin fusion.

The heat broke!!!! It's actually darn near pleasant in my house with the fans. Which is a good thing, because I had WAY more fresh vegetables than I needed for my salads. So...Summer Vegetable Stir-Fry.

Hoppin Juans made me literally laugh right out loud. I had to explain to my mother.

Is that leftover spaghetti in a French roll?  You could have made a Burrito out of it!

Spaghetti goes on a plate or in a bowl.  Never a burrito or a roll.

This is a meatball sandwich with grilled onions, peppers and topped with melted mozzarella.

That's an impressive rhyme that makes so much sense!

The Italian version....

Spaghetti va su un piatto o in una ciotola. Mai su un burrito o su un rullo.

Last night I made Moroccan Chicken Tagine using preserved lemons I made last week. Served it with basmati rice.

As much as I love olives, the aroma of them cooking and the taste they take on heated changes that love.

Agnes, did you cook it in a tagine?  My brother makes a Moroccan meal every year for our holidays and he serves the dishes he makes in the tagines he bought in Morocco.  He's too afraid to actually cook in them.

Chefbuba...  It's way too hot for Shepherd's Pie here although yours looks tempting.  Lamb or beef?

Well, sure...if someone were to make me Shepherd's Pie, I would absolutely eat some! They just can't make it in my house.

We actually have cooled off considerably the last couple of days, and are now in the high 80's with dew points down around 50-60, so the humidity has backed off a lot.

Dammit. Now I want Shepherd's Pie. I wonder if there's still any in the freezer...

Shepards pie! Awesome! One of the best, cheapest meals. We had horrible temps here, as well, Felix. I made a big green salad with lots of stuff in it-we enjoyed the coolness of it.

Had Israeli food for dinner, picked up from a place called Nagila.

Baba Ganoush, hummus, Israeli camponata, felafel balls, pitas, some sort of lamb and some sort of beef along with two types of Persian rice (curry/lentil and cherry) and a Chinese Chicken Salad.

It was Israeli food served with International leftovers at my brother's house.

Hey Mar! No I don't have a tagine but made it in my Lodge Dutch oven. Came out great.
I came home after a 12 hour day at work today, we were short handed, only to have a brand new Weber grill being delivered by UPS. My husband, who works nights (11pm-7AM) at a local hospital and was asleep upon delivery, had ordered it for me only telling our kids. They all seemed to know about it! Nice surprise after a long day!

Applesauce for latkes.

Agnes, charcoal?  Ga?  Which model?  (Not that I know them, anymore)

I have to give my BGE a good cleaning.  I had a hard time starting it on the 4th.  There are 2 filet mignon in the freezer waiting for the first thaw.

I was inspired by the breakfast bagel posted by Agnes.

Bill- my friend has a neighbor who sells her chickens for 12.00 each( believe it or not-she puts them out in a freezer out on the road-honor system on paying) and they are the best. Big, plump and worth every penny.

Interesting salad, Felix.  What kind of dressing did you use?

Tonight was Bologna sandwich night but I went out to lunch with some friends.  Lunch was a spicy chile relleno plate with beans and rice.
