I made corned beef and cabbage/New England boiled dinner. Corned beef brisket, cabbage, carrots, red potatoes, turnips, onions, and garlic, gradually added to my Dutch oven through the course of the afternoon. Took a fabulous picture of it, too! And then technology blew up on me, and somehow transferring pictures from my phone to my laptop caused them to completely disappear.

Tonight I  am making meatloaf,  The good news is............cold meatloaf sandwiches for lunch tomorrow 

While leftover meatloaf sandwiches, cold or hot, are always good news I consider a dinner of meatloaf, mashed potatoes, gravy and green beans, or some other vegetable, to be a repast fit for a king. As you might guess I absolutely love meatloaf.

I got a recipe on a trip to Amish country for ham loaf.  Half ground beef and half ground ham.  It was great!!

We're having homemade Cuban black bean soup and fried potatoes. I am pretty sure I posted the recipe for the soup in the recipes forum. Might have to search in all categories though.

Chicken thighs marinated in soy-balsamic-garlic, and then a bunch of cheating. Bag salad, antioxidant blend frozen vegetables, and a Kraft pasta salad out of a box.

We had chicken brought in from Versailles.
 
I couldn't stick my fork into the breast it was so hard.  Mom went to the kitchen for a steak knife.  She couldn't cut it. 
 
Hard AND dry.  Very disappointing.

Finally tried Umami Burger in Palo Alto, and got the "Manly Burger" which has beer-cheddar cheese, smoked-salt onion strings, and bacon lardon on a 6-oz. patty.  I loved it, but my arteries won't, so it will be a very occasional indulgence!

Maybe I hit it on a good day.  The Yelp reviews for Umami Burger in Palo Alto are average: 3 out of 5 possible stars.  I would've liked the burger itself, but the lardons put it over the top for me (in a good way).  Well, and I love fried onions on a burger.  In fact, want another one right now!

Tonight was a vegetable lasagna using zucchini, yellow squash and eggplant instead of pasta.

I also made a lasagna with pasta. I like to use a meat sauce with Italian sausage and meatballs when making lasagna but this time I also used a layer of pepperoni in one of the layers (I usually do four layers). It was a big hit! I will do that again!


I always think that the food will last longer than it does!

I had..... a Smashburger!  I chose the Mushroom Swiss and loved the combination of flavors.
 
Ordered the onion straws and flash fried vegetables which won't be ordered again.  Greasy and salty.

Dinner tonight will be pizza rolls. They're in the oven now since I just got home from work.


felix, the key that I learned through trial and error is slicing all the vegetables you are using in lieu of pasta about 1/4 of an inch thick and roasting them in a 400 degree oven for about 20 minutes with a little drizzle of olive oil and some salt and pepper.
That gets a good portion of the moisture out and concentrates the flavor. I make it that way for my husband, who needs to be conscience of his carb intake, using zucchini, yellow squash and this time also eggplant. Everything else I do is what I would do making lasagna with pasta, including the pepperoni layer and meat sauce.

*smacks self on forehead* Roasting! It never occurred to me to roast it! Good lord, but I feel dumb. Every other casserole I make with eggplant I roast it first...why I couldn't figure out to apply that to lasagna is completely beyond me.  Thank you!
 
Speaking of which...tonight I did an eggplant alfredo casserole, served with baked chicken thighs seasoned with Italian-Romano seasoning blend.

Last night I grill-charred 3 poblanos, 2 jalapenos, and 7 cloves of garlic and blended them with olive oil, white wine, and lime juice to make a marinade.  3 pounds of chicken wings are soaking it up right now and I'm looking forward to having them for dinner tonight.

Janet is in her third day of a week++ long visit to her daughters family in the Finger Lakes area of N Y. She is enjoying the visit, not only to family, but to the "Napa Valley" of N Y. while not wine drinkers, we do enjoy the orchards and produce stands in the rural areas this time of year.   She left me a 'Frig full of stew-like creations with rice on the side...and several nice Porterhouse steaks.  So far the score is -- Steaks- Three ,   Stew-like stuff--Zero" (at the end of three !!)  But some canned biscuits, baked and smeared with newly home-made Apple Butter has kept me from Starving.
  High point of "My Vacation", so far, has been watching a rerun of the film "EXODUS" from Midnite to 3 AM this morning.

I made one of my infamous "pantry stews". Primarily so I could freeze a bunch of individual portions for when work picks up again.
