It does look very good!  Mine happened by accident.  I asked the butcher at our Italian specialty store if he had any ground veal.  He said if they had any it would be in packages in the frozen food section.  I found the bin marked "ground veal" and grabbed the last package.  When I got home and looked at the label it said "ground ham".  So I made hamloaf.

I am having fun with the camera!
The string bean ends went down the disposal!  I don't save any trimmings of anything for stock........no room in the fridge. 
Did you make the CFS?

Crock pot pot roast tonight served with 3 cheese mashed potatoes........(when the roast comes out it is so tender it melts in your mouth!  Whatever is left over we will make shredded pork tacos from it! )

Tonight's dinner was spaghetti and meatballs, not cooked by me. I enjoy when others cook.

Hey Lisa...about the Cabaillaud Basquaise...did you use bacalao (salt cod) or just some sort of fresh? I love Basque cuisine...my wife just got back from Barcelona/San Sebastian/Bilbao and dined at a place called Arzak in SS. I guess a Michelin star+ place. Your dish reminds me of Cioppino...is it similar? Also, all the recipes are in Basque French...any ideas? Here's a link for Arzak you might find interesting with your culinary background.

They are addictive..
From lowcarbfriends.com -
1/2-1 cup grated parmesan cheese
2 t. paprika
1 T each of dried parsley, oregano, and basil
1 t garlic powder
salt and pepper
How To Prepare: Make a dry mixture from:


1/2-1 cup grated parmesan cheese
2 t. paprika
1 T each of dried parsley, oregano, and basil
1 t garlic powder
salt and pepper


Dip raw wings in melted butter then coat with dry mixture.
Bake on FOIL LINED cookie sheet for 45 min's to an hour at 350.
 
I do mine on a broiler pan so the fat can run off, they come out crispier. Be sure to foil the bottom of the pan!!
I use a decent imported Pecorino Romano instead of the parmesan, I like it better.

I would think that strips (or any other pieces, for that matter) would be dynamite also. You would have to reduce the time for strips though, wings tend to take longer while the fat renders out.
Virtually no carbs too, for us diabetically challenged diners.

Well, I didn't cook last night. Instead, I had dinner (and lunch too) at the 21st Annual ScotsFestival at the Queen Mary. So, you ask, what was it I had for dinner?

 
 A Scottish Meat Pie....
 
 

A steak and mushroom pie.....
 


A Cornish Pasty, Bangers and Mash, Mashed Turnips, and of course----haggis!
 

The haggis, which I was apprehensive about and tried for the first time, was delicious.
 

Pre-dinner was MacCallan, Cutty Sark and Highland Park Scotch......
 

All accompanied by bagpipes and drums.....
 
Hamish Rose MacTavish got the Clan Rose tartan plus a tartan scarf. The wee laddie is set now.

I didn't notice a stomach or a bladder anywhere.

It was cooked in the stomach and then finished after it was taken out. Each stomach holds many servings. The basic haggis comes from Charlie Lamb and then they finished cooking it and topped it with onion gravy. I was told by the Executive Chef of the Queen Mary that they ordered 500 lb. for each of the days. The place that I got my meat pies from also served haggis, so it sounds like a lot of haggis was eaten this weekend. They also removed theirs from the stomach after cooking, filling sausage casings with the haggis for each individual serving. 
 
I didn't think to get a picture of the haggis in the stomach. My bad!

I'm assuming Cutty Sark has improved from that hellish nastiness my dad used to drink. It always came in sculpted ceramic bottles (the one I remember most had a leaping trout, but there was also a whitetail deer on one), and tasted a little like I would imagine the floor of a subway car does at the end of a long day. Other than that, all of that looks pretty good!
 
Tonight I'm finally having ribs. Crock pot ribs as I'm running errands all day, but ribs with my homemade BBQ sauce. It's not even 10am and my house smells amazing.

I made something close to what CC did the other day-chuck roast debris. Slow and low chuck roast, simmered in brown gravy, au jus and a packet of dry onion soup mix. Eaten with provolone on an Italian roll from a local bakery. While Bob is in Texas eating good Mom and Pop Mexican food, I am feasting on good old cold weather cooking.

The Macallan, however, is superb stuff.

Macallan I would drink all day long. Likewise Johnny Walker Blue. The Cutty Sark though...yeesh. Glad it's not just me!

I didn't see curling, but they threw the caber (I think that's the big log), the iron ball and did Scottish sheep herding. Darts too!

I only tasted one Cutty Sark, the 100 proof "Prohibition". Not as good as The MacCallan or the Highland Park I sipped, but I still had no problem finishing it!

Tried RKB's Heroin Wings, with strips of boneless/skinless chicken breast instead of wings. Pretty tasty! Served with some roasted ranch cauliflower and frozen peas and carrots (I ran out of energy...whatever).

lleechef - The roast chicken looks beautiful. The roasted chicken may be the most elegant of all meals. So simple to do, yet so easy to screw up. . It falls into the same category as prime rib, leg o lamb, lamb shanks and braised raccoon. My hat is off to you.

Are those filets pan sautéed? They truly are beautiful.

Last night I had doctored up Bear Mountain packaged Tortilla Soup.

New hint for fast doctoring... A few spoonfuls of Rotel and a few drops of the juice out of a jar of pickled jalapeños and WOW..flavor explosion!

Then, Served over rotelli pasta.

Yes, there was cilantro in the black beans, I apologize.
About the catfish, I dredged them in a mix of flour, yellow cornmeal and Cajun spice then pan-fried them in my cast iron skillet in canola oil.
