I haven't done much cooking lately and I figured it was time when I saw these 8 rib racks of Australian lamb at Costco.

Should have made fresh vegetables but I didn't have any.
 
Salt, Pepper and rubbed with a mix of Dijon Mustard, rosemary, garlic and a splash of Balsamic Vinegar.
 
Baked on a rack for 45 minutes at 400º.
 
I need to buy more of these!

Dinner to night was scampi with fresh spinach sauteed in olive oil with garlic and red pepper flakes, a crusty baguette and a marvelous Prosecco.

These were $12.89 for the rack at Costco.  Wish I had an income so I could enjoy them more often.

IF I had all of your money I'd throw mine away!  
A three week or so road trip couldnt have been cheap!  Just think of how many racks of lamb you could have bought!  
 
You know.......... there are those weird things out there called :  Jobs!

Tonight I had one of those kitchen karma nights. Shrimp, avocado and feta crustless quiche (frittata, whatever), frozen mixed vegetables with my cheese sauce, and green beans from a can (I keep running out of creativity when it comes to that second side, gotta work on that). It was amazing!

My local A&P supermarket had some for about that price so I bought two, one to make and one to freeze. If I were to buy 8 single lamb chops (American Raised) I would have paid more.

I watched and DVR'd America's Test Kitchen's version of Chicken Fricassee. And literally wrote down the recipe as I watched. I came out really nice. I served it with rice and baby peas.

Every year at Christmas my sister sends me and my kids gift cards for any of the Brinker restaurants, including Macaroni Grill. Not where I would usually go but my kids and I always have such a good time and usually go to Macaroni Grill. Enjoy!!

I made my Sister happy by going to Chili's with her. I had a salad. The last time I reported eating dinner was in Oct. when I went to TGI Friday's with all of my siblings. This is why I don't eat dinner very often.

That looks delicious! I love Indian food!

I was craving ice cream the other day but the weather was bad. I had a package of Kulfi mix that I picked-up at the Indian cash & carry. I had low expectations...but had to give it a try. I had lower expectations when I tasted it (saffron - almond - pistachio) before it went in the freezer! It was delicious! I will try to make it from scratch...now that I enjoyed it.

I'd love to see the blog...if you'd like to share it!

I met him when we were both at the Culinary Institute of America at Greystone.  He was in the culinary program, I in the baking and pastry.  He's in Dubai now--pretty exotic compared to my world!
