Eggplant parmigiana sub...

I made a cute & fancy Louisiana crunch mini- bundt cake...

That was delicious as well.

I also had a sub but it was chicken salad.

Along with that  I had some Miss Vickers Smokehouse BBQ Potato Chips.

I was in a mood...root beer pancakes, chocolate peanut butter mug cake, and hot cocoa from scratch.

Ha!!  You WERE in a mood!   How were the root beer pancakes?  Was there root beer in the batter, syrup, or both?

Originally I was going to make peanut butter no-bake cookies as well, but I was full. It's one of those days.

The pancakes were really tasty! More effort than making them from a box, but I make mine from scratch anyway so it really wasn't that big a deal. Root beer in the batter only (although now I'm thinking of ways to make root beer syrup, because that would be fabulous on them). Recipe came from Once a Mom Always a Cook.

Thank you for sharing the recipe!  I'm very curious about it and might try it, too.  I'd think with the whipped cream it might even be root beer float-ish.

Man I want to try the real thing someday. I have pastrami sandwiches made with the packaged stuff, it's not great. What you have there looks great.

love2bake, a friend suggested another mug cake, and I like it even better! Instead of the optional chocolate chips I added a tablespoon of peanut butter, and it was awesome! And yes, this is what I had for lunch. With a banana and a yogurt. Whatever.

Okay--I took the bait and tried the recipe.  I added a pinch of salt and some chopped pecans but otherwise followed it, including the chips.  Taste-wise it was good, but it had a bizarre texture--at least mine came out that way.  Mine also didn't "fall" and just stayed looking like the following photo.  Anyway, it was fun to try.

Bill,
Katzinger's is not a NY deli like Carnegie or Katz's but for Columbus it's pretty darn good.  I was sorry I didn't get a side of chopped chicken livers.
I don't know if we smelled great that night...........I slept in the other bedroom to escape the snoring.

Huh. I wonder if it was the salt? Mine had a texture just like regular cake, and of course you can see it fell (which happened almost immediately upon the microwave getting done)...way less crumbly than the other one, too. I'm probably done with these for a while, though, unless I recipe I can't refuse comes along.

My daughter and I had lunch at one of my favorite places, Benny's Luncheonette in Fair Lawn, NJ. She had a grilled bacon, tomato and cheese with a side of fries and I had scrambled eggs and home fries with sausage gravy and a cheese biscuit on the side. Very yummy!

I had six White Castles and a glass of milk. I wanted to post a picture, but lleechef was concerned that her camera might die if it was in the same room as a White Castle burger.

Beautiful lunch Agnes...& a real blessing when kids that age still enjoy hanging out with Mom. I'm having lunch at the Diner with my two blessings tomorrow & we always have fun.

Today I made a standing rib roast...

I found delicious sweet strawberries so ice cream as well. I just have to wait for it to toughen up a little. Let's go....

I would like to see the pictures of the White Castles as well. I haven't had the real deal since the last time I went back to Ohio 15 years ago. The only ones we can get here are the frozen ones and since the nearest grocery store is 50 plus miles away they are few and far between. On the other hand today was dispatch chicken day. So after dispatching eight chickens I had fried chicken livers, hearts and gizzards for lunch. The one thing I don't understand is why my bride and grands go outside every time I fix any type of liver.
