It seems that some people are under the impression that this isn't lunch. Silly people! It's got Jameson and it's St. Patrick's Day!

From my kitchen! And as with everything I've been making lately...stupid easy.
 
1 (9-inch) chocolate pie crust (ready-made, I use Oreo)
2 boxes (3.4 ounce) cook-and-serve chocolate pudding mix
3 cups 2% milk
1/4 cup whiskey (preferable Jameson, but any good Irish whiskey will do)
2 tablespoons instant coffee
8 ounces whipped cream
 
Step 1
In a large saucepan, whisk together pudding, milk, Jameson and coffee.
Step 2
Bring to boiling over medium-high heat, stirring constantly, until it gets thick (about 10 minutes).
Step 3
Remove from heat and let cool 10 minutes, stirring occasionally to prevent skin forming.
Step 4
Pour into pie shell and smooth top; cover and refrigerate at least two hours up to two days.
Step 5
Before serving, cover with whipped cream. Sprinkles can be added for a more festive look.

Nice looking piece of salmon, Bill.  Bet you can hardly wait to get your hands on some fresh Copper River reds!!  The halibut I made the other night was fresh Alaskan......it was fantastic.

Lisa, you betcha I'm looking forward to the Copper River Salmon. When you eat a piece of Halibut fresh, there is no going back to frozen. I would rather have the memory of a great meal, than try to replace it with something of less quality. Now I want Halibut...........

I refuse to buy any fish that was previously frozen or fresh fish that looks "tired".  In that case, I'll suck it up and eat filet mignon.

Went to Bill of Fare in San Jose and got their linguica, onion, tomato and cheese omelet. 

 
It was fine, but I'd rather go to the place Agnes went to a few messages back!    I'll take some of that salmon for dinner, too, while I'm still dreaming.

L2B, your running out of plate, it looks good. We made some 10hr slow roasted  Beef Peppers and onion on Hawaiian slider rolls with melted swiss cheese, homemade potato salad and Queso & Jalapeno pepper dip with corn chips.

We went to a late lunch, early dinner at El Torito.  Their monthly specials are so much better than their regular menu items.
 
I had the combo seafood fajita plate which consisted of shrimp, Mahi Mahi and strips of pounded calamari steak that was dipped in crumbs and possibly deep fried.  If it was they flash fried it because it was very tender.
 
They can keep their beans.
 
I sipped a Cadillac Margarita throughout.

Great lunch for the first day of spring.  Taylor Pork Roll & cheese on a Kaiser roll and a birch beer at Litterer's, on the boardwalk in Ocean City.

Lunch today @ the Broadway Diner. No matter what I order...I'm always pleased.

Today was London Broil & it comes with a salad fries & I love the red cabbage...








No bread pudding today ...so no dessert.

Mmmmm... that looks delicious and hearty.
 
I made an open face meatball sandwich.  It was quasi-healthy as I used extra lean ground beef and a homemade marinara.
